Dahi bendi


Preparation time : 20 mins
Serves : 3

Ingredients :

Okra/Bhindi / Lady finger : 250 grams
Curry Leaves : Few
Mustard Seeds : 1 tsp
Cumin Seeds : 1 tsp
Fenugreek Seeds : 1 tsp
Red Chillie Powder : 1/4 tsp
Garam Masala : 1/4 tsp
Ginger garlic paste : 1/2 tsp
Oil : 1 Tbsp
Yogurt/Dahi/ curd : 1/2 Cup
Green Chillies : 2 slit length wise
Gram Flour : 1 1/2 Tbsp
Asafoedtia : 1/4 tsp
Turmeric Powder : 1/4 tsp
Coriander Leaves : Few
Salt : to taste
Water : 1/2 Cup

Method:

To make dahi mixture:
In a bowl, add the yogurt, gram flour, red chilli powder, turmeric powder and garam masala and whisk all the ingredients well. Make sure there are no lumps of the gram flour.
Add water and whisk again.

Heat oil in a pan.
Once the oil is hot, add the bhindi to it. Reduce the flame, cover the pan with a lid and let the bhindi cook.
Toss the bhindi periodically.
Once cooked, get the pan off the flame.

To make dahi kadi:
In a saucepan, heat oil.
Add the mustard seedscumin seeds and fenugreek seeds.
Once the fenugreek seeds change colour, add the ginger garlic paste, slit green chillies, curry leaves and asafoetida and saute well. Add the yogurt mix and let the kadi boil for atleast 3-4 minutes.
Add the bhindi to the kadi, salt to taste, pinch of sugar and coriander leaves and stir well.
Pour the dahi bhindi in the serving bowl. Squeeze little lime juice and garnish with few coriander leaves.
The delicious dahi bhindi is ready to be served.

Cauliflower carrot cheese dosa



Preparation time : 10mins + 1 day
Makes : 20 dosa's approx.

Ingredients :

Urad dal : 1/2  cup
Raw Rice : 1 1/2 cups
(Urad dal : rice --> 1 : 3)
Methi seeds or Fenugreek seeds : 1 tsp
Chana dal : 2 or 3 tbsp
Salt to taste

Egg : 1 or 2 (optional)
Cauliflower : 1/2 cup grated
Carrot : 1/2 cup grated
Coconut : 1/2 cup grated
Cheese : 1/2 cup grated
Coriander leaves : 1/2 cup finely chopped
Chat masala : 1 Tbsp
Butter : 2 Tbsp

Method :

Soak all the ingredients except salt in plenty of water over night or for minimum of 6 hours.

Methi seeds will give flavour for your dosa where as chana dal will give a nice colour to your dosa.
Strain and save that water for further use.
Add soaked ingredients to grinder.
Grind them into a very fine paste by adding little by little of  that saved water.
If you are using wet grinder you can do the entire grinding in 20 mins but if you are using mixi then do grinding it for 5 mins and leave it for 15 mins and again grind it for 5 min and so on ............ do it like that for 4 to 5 times.
If you do like this your mixi will not become hot and will not go wrong.
Take entire dosa batter to a bowl with your hand, cover it with lid and keep it in warm place.
[If you use your hand to take it into bowl then it will ferment nicely, i don't know what is the reason may be some chemicals from hand will go in  ;) ]
Leave batter to ferment over night or for a minimum of 12 hours.

(If climate is cold then don't leave batter outside, keep it in a dark , warm place like shelves or oven(off mode only) then it ferments good )
So if you want dosa next day morning, then soak today morning , grind in the evening and ferment in night.


After fermentation the batter will looks to be double in quantity , mix it once with spatula and add salt.



Take a pan heat it , put a ladle full of batter at centre and make dosa by rotating the ladle from middle to end of the pan in a circular motion.
After that Spread beaten egg, grated cauliflower, grated carrot, grated cheese,grated coconut finely chopped coriander leaves, and chat masala on top of Dosa evenly.
Apply butter around dosa.
All these toppings are optional , you can add all or omit some of them and make dosa.
Cover it with a lid, reduce the flame to low and cook for one to two minutes.
When you see bottom turn to nice golden brown color, take it off the flame.
You can just roll dosa and cut into pieces and serve it as dosa rolls.
Enjoy your dish as it ease or with any other side chutney :)

Healthy Brownie (Stove top or Oven )

Its been a long time i posted a recipe.... I am quite busy with my kid... Now  i think i can blog again, so coming with a healthy brownie :)
Why it is a healthy brownie - bcoz it uses wheat flour and made using very less fat and tastes equivalent to the normal brownie of course, give it a try you surely will love it :) Lets start .......

Preparation time : 30 mins to 45 mins approx
Serves : 4 to 6

Ingredients :

Wheat flour or atta : 1 cup
Cocoa powder : 1/3 cup (Unsweetened)
Baking soda : 1/4 tsp
Salt : 1/4 tsp
Oil : 5 Tbsp
Low fat curd or yogurt : 6 Tbsp
Sugar : 1 cup
Eggs : 2
Vanilla : 1 tsp
Walnuts : 1/2 cup
Chocolate chips : 1/4 cup

Method :

Take a bowl and sift flour , cocoa powder, baking soda and salt into it.
Now take one more bowl and add oil (I added sunflower oil if you are going for healthier option you can use extra light olive oil ), curd or yogurt, sugar, eggs (at room temperature) and vanilla extract .
Mix everything well with spatula.
Now add your flour mixture into this bowl and mix everything good.
Dry roast nuts once and then add them into the bowl.
Add chopped dark chocolate or chocolate chips into the bowl and mix it once.
Now the mixture is ready.

Stove top :

Take a flat bottomed vessel grease it with oil or butter, sprinkle some flour.
Tap it up side down to take out any excess flour.
Transfer the contents of brownie mixture into this vessel.
Put a very thick bottom tawa on medium heat for 5 mins once it is hot put it in low.
Keep our vessel on top of that heated tawa and cover it.
Let it cook for 45 mins or till when inserted tooth pick comes out clean.
Take it off from the stove.
Let it cool completely.
Separate it from the vessel.
Cut into pieces

Oven :

Take a baking tray, lightly grease it with butter, sprinkle some flour.
Tap it up side down to take out any excess flour.
Pour the brownie mixture into this.
Tap it once
Preheat the oven in 350 degrees.
Put it in the middle rack of the oven for 20 to 25 mins or till when you insert a tooth pick or knife it should come out clean.
Take it out from the oven, when done.
Let it cool down completely.
Separate it out from the baking tray.
Cut it into pieces.

Wheat thins




Preparation time : 30 mins + 40 mins
Makes : 13 dozen

Ingredients :

Whole wheat flour : 1 1/4 cups (5 ounces)
Sugar : 1 1/2 Tbsp
Salt : 1/2 tsp
Paprika : 1/4 tsp
Butter : 4 Tbsp , 1/2 stick
Water : 1/4 cup
Vanilla : 1/4 tsp
Additional salt for topping (optional)

Method :

Combine the flour, sugar, salt and paprika in a medium bowl. Cut the butter into small pieces and mix it in thoroughly, using your fingers, a pastry blender, a mixer or a food processor. Combine the water and vanilla, and add it to the flour mixture, mixing until smooth

Pre heat the oven to 400˚F. Lightly grease baking sheets or line with parchment paper.

Divide the dough into 4 pieces; keep the other pieces covered while you work with one at a time. Lightly flour your work surface and your rolling pin and roll the piece of dough into a large rectangle, which should be at least 12 inches square when trimmed. Keep your pin and the surface of your dough evenly floured. Flip the dough frequently to keep it from sticking, but too much flour will make it difficult to roll. Keep rolling until the dough is as thin as you can get it without tearing, at least 1/16 inch thick. Trim the dough to even the edges and use a pizza cutter or a sharp knife to cut the piece into squares approximately 1 1/2 inches wide. Transfer the squares to a prepared baking sheet; you can crowd them together, as they don’t expand while baking. Sprinkle the squares lightly with salt, if desired. Repeat with the remaining pieces of dough. Save the scraps under plastic wrap and re roll them all at once just one time.

Bake the crackers, one sheet at a time, until crisp and browned, 5 to 7 minutes. If some of the thinner crackers brown too quickly, remove them and return the remaining crackers to the oven to finish baking. These crackers bake quickly, so watch them closely – even 30 seconds can turn them from golden brown to toast! Remove the crackers from the oven and cool on the pan or on a plate; they cool quickly.
These crackers will stay crisp for several days, but are best stored in airtight containers.

Hara Bhara Kabab

We had a potluck last week and this is the starter that my friend got and its so tasty then i asked for the recipe, tried it but i dint do deep fry, i just did shallow fry .  This is so healthy and tasty ... give it a try :)



Preparation time : 30 mins
Serves :

Ingredients :

Capsicum : 1 medium size chopped
Green peas : 1 1/4 cup
Spinach leaves : 3 cups Boiled and chopped
Fresh Mint leaves : 10 chopped
Fresh Coriander leaves : 2 Tbsp chopped
Oil : 1 Tbsp + for frying
Cumin seeds : 1/2 tsp
Chopped Ginger : 1 Tbsp
Green chili : 3 finely chopped
Salt : to taste
Turmeric powder : 1/4 tsp
Potato : 1 large , boiled and grated
Bread crumbs : 2 Tbsp + 1/4 cup
Corn starch : 1 Tbsp
Chat masala : 2 Tbsp

Method :

Heat one table spoon oil in a pan, add cumin seeds and saute for a while.
Add ginger and green chili and saute for a min.
Now add capsicum and saute for 2 mins.
Add green peas, spinach, mint, coriander leaves, salt and turmeric powder.
Mix well and cook till the mixture is dry.
Transfer cooked mixture to a mixie jar and grind into a smooth paste.
Transfer into a bowl.
Heat sufficient oil in a kadai.
Add potato, 2 Tbsp of bread crumbs and cornstarch to the ground paste.
Mix well.
Spread 1/4 cup bread crumbs on a plate.
Divide the cooked mixture into equal portions and shape them into kababs.
Roll the kababs in the bread crumbs and coat well.
Deep or shallow fry kebabs till golden and crisp.
Drain on absorbent paper.
Serve them hot !!
