Menthi kura pappu


Preparation time : 20 mins
Serves : 3

Ingredients :

Methi or Fenugreek leaves : one bunch (1/2 cup  to 3/4 cup chopped)
Toor dal : 1/2 cup
Onion : 1/2
Tomato : 1
Tamarind pulp : 1 tbsp
Salt : to taste :
Green chillies : 2 or red chili powder : to taste
Turmeric : pinch
For tampering (or tadka ) :
Ghee or butter or oil : 1/2 tsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Red chili : 1
Curry leaves : few

Method :

Take a pressure cooker , Add all the ingredients (not those tampering ones) listed with 1 1/2 cup of water .
Pressure cook for 15 mins or for 2 to 3 whistles.


Let the steam go and open the pressure cooker lid.
Mash it a bit.
Take a pan add butter or ghee or oil, add ingredients listed for tampering , let them sizzle a bit, when done add this on top of dal and mix it once.
Dal is ready to serve, have it with rice or roti.

Radish dal

This is a rajasthani dal. I afraid a bit , how it tastes when i gave it a try but it turned out amazing.. :)


Preparation time : 30 mins
Serves : 4 to 5

Ingredients  :

Radish, cut into pieces : 2 to 3 (As i have red radish i used that in my dal , u can use any radish)
Ghee : 1 tbsp
Cumin seeds : ½ tsp
Green cardamom : 3
Cinnamon : 3  small pieces
Cloves : 4
Red chillies : 3
Bay leaf : 1
Garlic  cloves : 6
Ginger slices : 1 tsp
Onion : 1
Salt : to taste
Green chillies : 3
Turmeric powder : ¼ tsp
Red Chilli powder : ½ tsp
Coriander powder : ¼ tsp
Kasuri methi : ¼ tsp
Water : 1-2 cups
Tur dal, boiled : 1 cup
Jaggery : 1 piece
Coriander leaves : 1 bunch

Method:

Peel and cut radish into pieces and keep aside.
(In my dal i used red radish as i have them at home)
Heat some ghee in a pan and when it gets hot, add cumin seeds, green cardamom, cinnamon, cloves, red chillies, and bay leaf. 
Saute until you get a nice aroma.
Add garlic, ginger slices, finely chopped onions, little salt and fry till the onions turn golden in color.
Add green chillies, turmeric powder, red chili powder, coriander powder and radish pieces. Mix well.
Add little kasuri methi and water. 
Mix, cover the pan with lid and cook for about 5 to 10 minutes until the radish is done.
Add in the boiled and mashed toor dal, a small piece of jaggery, chopped coriander leaves, mix and bring it to a boil. 
Serve it hot with roti, chapatti etc. or even with rice .

Brinjal dal


Preparation time : 20 mins
Serves : 2

Ingredients :

Toor dal : 1/4 cup
Chana dal : 1/4 cup
Brinjal : 1 cup ( 2 medium size egg plants)
Onion : 1 small ( 1/3 cup)
Green chili : 2
Mustard seeds : 1/4 tsp
Cumin seeds : 1/4 tsp
Garlic : 5 to 6
Curry leaves : few
Turmeric : pinch
Amchoor powder : 1/2 tsp
Chili powder : to taste
Oil : 2 Tbsp
Coriander leave : 2 springs

Method :

Pressure cook both dals with little salt and turmeric powder until fully cooked, keep this aside.
Take a pan , heat it, add 2 Tbsp of oil , when hot add mustard seeds, let them splutter, add cumin seeds, once crackle, add crushed garlic , once sauteed add curry leaves.
Add cubed onion, fry it a bit.
Add turmeric and sliced brinjal .
White brinjal goes well with this recipe , as i have only purple ones i used them.
Add Amchoor powder. (This is must, taste comes from this).
Add chili powder and salt,mix every thing good.
Cover and cook till brinjal is done, if you want u can add little water while cooking.
(Don't over cook the brinjal)
Add cooked dal to this, let it come to a boil.
switch off the flame, garnish with some freshly chopped coriander leaves.

Coconut dal

This dal is so easy to prepare and yet tastes so great. You can have this just as a soup or as usual you can serve it with rice.
Here is the simplest form - the coconut makes it especially creamy. Tamarind paste, peas, spinach leaves, wild garlic, grated fresh coconut and more have all made an entrance in this recipe over time.
Once you have the method creaked, experiment ......



Preparation time : 30 minutes
Serves : 2 to 3

Ingredients :

Toor dal : 1/2 cup
Coconut milk : 1/2 cup
Turmeric : 1/2 tsp
Coconut oil : 1 or 2 tsp
Onion : 1 medium ( or chopped onion : 1/2 cup)
Garlic cloves : 3
Ginger : 2 inches
Garam masala : 1 tsp
Red chili powder : 1 or 2 tsp
Cumin powder : 1tsp
Coriander powder : 1 tsp
Mustard seeds : 1 tsp
Curry leaves : 10
Tomatoes : 2

Method :

Pressure cook the dal with cinnamon stick and turmeric till it is soft.
This cooked dal smells so good ...... with nice cinnamon flavor .
Add coconut milk and salt to it.
Do not let this mixture boil - the coconut will curdle if this happens.
Continue to cook further for 15 minutes on a low flame until it thickens but remains soupy.
Take the pan of the heat.

Mean while prepare tadka.
In a frying pan over a moderate heat add coconut oil, then fry onions until soft and beginning to turn golden brown for about 10 minutes.
Add thinly sliced garlic and grated ginger and continue to fry for 3 more minutes.
Add the spices, mustard seeds and curry leaves.
Fry till mustard seeds crackle then add tomatoes and cook for 5 minutes.

Add the spiced onion tomato mix back into the dal, stir well and check for seasoning.

Drum stick leaves sambar


We call drumstick leaves as munaga aaku.
Here is the recipe for sambar with those leaves ... This taste excellent especially if you like different tastes or i can say if you are a foodie


Preparation time : 30 mins
Serves : 2

Ingredients :

Toor dal : 1/4 cup
Drum stick leaves : 1/4 cup
Green chili : 2
Coriander seeds : 1/2 tsp
Pepper cons : 3 to 5
Chana dal : 1 tsp (1 + 1)
Onion : 2
Tomato : 1 (optional)
Salt : to taste
Sambar powder : 1/2 tsp
Tamarind paste : 2 tbsp
Coriander leaves : few

For seasoning :
Urad dal : 1/2 tsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1/4 tsp
Curry leaves : 6

Method :

Pressure cook dal and leaves seperately.
Mash the dal , grind the leaves , keep them aside.
Take a pan, heat it , add a tsp of oil , add green chili, coriander seeds, pepper cons, chana dal and onion fry them till they are golden brown.(If you are using tomato fry it a bit)
Let them cool down, grind it into a paste with coriander leaves. Keep it aside.
Take a pan, heat it , add a tsp of oil, add seasoning ingredients one by one and saute them.
Add chopped onion , fry it till translucent.
Add the paste that we made.Fry it a bit.
Add tamarind pulp and some water, let it boil.
Once it boils add drum stick leaves paste, salt , turmeric.
Add mashed dal and sambar powder.
Sambar is ready to serve.

Bottle gourd dal (or) aanapa kaaya pappu


Preparation time : 30 mins
Serves : 2

Ingredients :

Bottle gourd : 1 cup
Moong dal : 1/2 cup
Garlic : one whole
Urad dal : 1/4 tsp
Mustard seeds : 1/4 tsp
Cumin seeds : 1/4 tsp
Green chili : to taste
Salt : to taste 
Curry leaves : few 
Coriander leaves : few

Method :

Wash, peel and cut bottle gourd into cubes.
Soak moong dal for one hour.
Take a pan, add urad dal, cumin seeds, mustard seeds, curry leaves, green chili and garlic while sauteing them a bit.
Add Soaked moong dal and cut bottle gourd.
Add little water, salt, cover and cook for 15 mins.
When done adjust consistency by adding some water.
Garnish with coriander leaves.

Dal makhani

Dal makhani is one of Punjabi cuisine's most characteristic signature dishes, and is high in protein. Traditionally, this dal is cooked on low flame, for hours, on charcoal, which gives it a rich, creamy texture and enhances the flavours of the dish. Dal makhani is prepared with lentils and beans combined with cream (malai) or fresh butter. Makhani means cream or butter. When cooked at home, more moderate amounts of cream or ghee are often used.
     
Dal makhani is a treasured staple food from the cuisine of Punjab, North India. Apart from Punjab, Dal Makhani is popular all over the world because of its richness in taste and nutrition.


Preparation time : one hour
Serves : 2

Ingredients :

Whole urad dal with skin : 1/2 cup
Kidney beans (or) Rajma : 2 tbsp
Chana dal : 2 tbsp
Cumin seeds : 1 tsp
Whole spices :
Cardamom : 2
Cloves : 2
Cinnamon : 2"piece
Bay leaf : 1
Ginger garlic paste : 1 tsp
Tomato : one large
Butter : 2 tbsp
Red chili powder : 1 tsp
Coriander powder : 1tsp
Kasoor methi : 1/2 tsp
Cream : 1/4 cup
Salt : to taste
Coriander leaves :  one spring

(Urad dal : kidney beans : chanadal = 1 : 1/4 : 1/4 and urad dal : butter : cream = 1 : 1/4 : 1 )
(If every thing is in cups then you need 5 to 6 tomatoes)

Method :

Soak dal's for one hour.
(I used split urad dal with skin so i got that color, if you use whole urad dal with skin you will get even darker color!!! )
(If you are preparing in hurry, then you no need to soak dal's but you should cook them for more whistles.)
Pressure cook dals till they are really well cooked and mashed up.
We will use water from dal in cooking later.
Make tomato into puree and keep it aside.
Take a pan , heat it, add 1tbsp of oil, when it is hot add cumin seeds, when they splutter add whole spices - cinnamon, cardamom, clove and bay leaf , saute them a bit.
Add ginger, garlic paste and turmeric.
Add tomato puree, cook for 5 mins, when it comes to boil add chili powder, coriander powder, and salt.
Cover it with lid, cook it for 5 mins.
Add butter, cook it for 5 mins.
Add water from dal and bring it to a nice boil.
Add cooked dal into this mixture, mix it good.
Add kasoor methi powder mix it well.
Put the flame in low, cover and cook for 30mins, stirring for every 5 mins.
After 30 to 40 mins add cream , mix it cover and cook for 5 mins.
If you want you can sprinkle pinch of garam masala powder on top.
Garnish it with freshly chopped coriander leaves.
Yummy Yummy Dal makhani is ready to serve.
Serve it hot with rice or roti.
(You should serve this hot.)


As this dish is rich in proteins and fiber, it would also be the healthiest meal at your home too. Rajma and whole urad provide protein and calcium which are extremely important for maintenance of your body cells and healthy bones. Cooking the dal in tomato puree adds a little sharpness to this dish and also enriches it with folic acid and vitamin A.

Green apple dal

We went to a ground, we saw one green apple tree there, we picked two apples and we had them, i can't eat more than half, then i thought why can't i make a dal with this sour apples, so i picked one more, next day i prepared dal with it . It is simply superb and you should try this one. It tastes really good awesome.



Serves : 2
Cooking time : 20 mins

Ingredients :

Green apple : 1 ( granny smith or bramley or cooking apples)
Toor dal : 5 tbsp
water : 2cups
Coriander leaves : 2 strings
Turmeric : pinch

For Seasoning :
urad dal : 1 tsp
Mustard seeds : 1tsp
Jeera : 1tsp
Curry leaves : 10
Green chili : 2

Method :

Wash dal and pressure cook it with 2 cups of water till mushy.
Peel and chop Green apples and keep aside.
Heat a pan add 1tsp of oil.
Add ingredients listed for tampering.
Add green apples, turmeric and cook till they are soft.
Add mashed dal to it.
Add little water if you want thin consistency.
Then add salt and check for taste.
Let it boil once.
Garnish with coriander leaves.
Serve it with Rice or roti.

Tadka dal


Preparation time : 10 mins
Serves : 2

Ingredients :

Toor dal : 5 tbsp
Ghee : 2 tbsp
Red chili's : 2
Mustard seeds : 1/4 tsp
Cumin seeds : 1/4 tsp
Urad dal : 1/4 tsp
Garlic : 6 cloves
Onions : 1/2 finely chopped
Hing : pinch
Turmeric : pinch
Curry leaves : 12
Green chili's : 1
Salt to taste

Method :

Cook dal in pressure cooker till it becomes mushy.
Take a pan , heat it, Add ghee, add in red chili's, urad dal,  mustard seeds, cumin seeds, garlic(add some of them as whole and some of them as finely chopped), green chili and onions.
Saute them for a while.
Add in hing , turmeric powder and curry leaves.
Add salt to your dal and check for seasoning.
Now add the prepared tadka to this dal.
Garnish with coriander leaves.
Serve hot with rice or roti.

Prepare this dish just before serving .
If you want you can also add tomatoes to this dish. For that, Take a pan, heat it, add water, when water comes to boil add tomatoes keep them for 30 sec, take them out keep them in cold water.
Take off the skin from tomatoes chop into quarters and add them to your dish.

Tomatoes : 3
Toor dal : 5 tbsp
water : 2cups
Ginger garlic paste : 1tbsp
Coriander leaves : 2 strings
Turmeric : pinch

For tempering :
urad dal : 1 tsp
Mustard seeds : 1tsp
Jeera : 1tsp
Curry leaves : 10
Green chili : 2

Method :

Wash dal and pressure cook it with 2 cups of water till mushy.
finely chop tomatoes and keep aside.
Heat a pan add 1tsp of oil.
Add ingredients listed for tampering.
Add ginger garlic paste saute it a little bit.
Add tomatoes, turmeric and cook till they are soft.
Add mashed dal to it.
Add little water if you want thin consistency.
Then add salt and check for taste.
Let it boil once.
Garnish with coriander leaves.
Serve it with Rice or roti

Lemon dal

Preparation time : 30 mins
Serves : 2

Ingredients :

Toor dal : 5 tbsp
Salt to taste
Lemon juice : 2 tbsp
Coriander leaves : 2 tbsp
for tampering :
Mustard seeds : 1/2 tsp
Urad dal : 1/2 tsp
Cumin seeds : 1/2 tsp
Green chili's : 2
Turmeric : pinch
Curry leaves : 10
Garlic cloves : 6

Method :

Add toor dal and water ( 2cups approx) to pressure cooker and cook it till 2 whistles or until smooth.
Take a pan add 1tsp of oil.
When it is hot add the ingredients listed for tampering one by one and saute them a little bit.
Then add mashed cooked dal, lemon juice,salt.
(For more tasty dal if you have lemon pickle at home add 1tbsp of it)
Let it come to boil.
Add coriander leaves.
Serve it with rice or roti :)

Spinach dal - 1


Serves : 2
Cooking time : 20 mins

Ingredients :

Spinach : 1bunch
Toor dal : 5 tbsp
water : 2cups

For tampering :
urad dal : 1 tsp
Mustard seeds : 1tsp
Jeera : 1tsp
Curry leaves : 10
Green chili : 2

Method :

Wash dal and pressure cook it with 2 cups of water till mushy.
finely chop spinach and keep aside.
Heat a pan add 1tsp of oil.
Add ingredients listed for tampering.
add spinach leaves and cook till they are soft.
Add mashed dal to it.
Add little water if you want thin consistency.
Then add salt and check for taste.
Let it boil once.

Serve it with Rice or roti
