Cinnamon Rolls


Preparation time : 2 hours 
Makes : 30

INGREDIENTS:

Warm Milk : 3/4 cup (110 degrees F)
Yeast : 2 1/4 tsp  
Sugar : 50g (1/4 cup)  
Eggs : 1 egg and 1 egg yolk  
Butter : 1/4 cup  (soften at room temperature) 
Bread flour (or) Plain flour : 600g (about 3 cups) 
Salt : A pinch 

Cinnamon mix : 
Dark brown sugar : 2/3 cup
Ground cinnamon : 2 Tbsp
Butter : 1/4 cup

Egg and butter should be at room temperature for this recipe.

Method :

Take a blow,  add in butter , sugar and cinnamon powder and give it a mix.
Keep this aside for later use.

Warm the milk (Don't heat the milk, if milk is too hot, the yeast will die.). 
Add yeast , sugar, egg and butter to the milk. Give it a good mix.
Add in flour. Make the dough. Keep it aside at least for an hour.
Once it is risen, dust some flour on the surface and roll it into a flat square of 1/2 inch thickness. (If you roll them thin , like how i did you will get it like pin wheels)

Now take the cinnamon mix and spread it evenly on top of the rolled dough. Now make it like a swiss roll and then cut the log into one inch thick pieces. Cover and keep these aside for hour an hour to raise again. Give egg wash on top .

Bake in preheated oven at 180 C for 25 to 35 mins Or until just slightly golden brown on edges.
Remove from the sheet when they are little warm (bcoz of sugar they will stick a bit)
We had them like that only with out frosting...


For the cream cheese frosting:

Cream cheese, softened : 4 oz 
Butter, softened : 3 tablespoons 
powdered sugar : ¾ cup 
vanilla extract : ½ teaspoon 

If you want to frost them , let them cool down for 10 mins. 
To make the frosting: In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla extract. Beat until smooth and fluffy. Spread over cinnamon rolls and serve immediately.

For Icing : 

Butter : 1/4 cup
Powdered sugar : 1 1/2 cups 
Vanilla : 1 tsp 
Milk : 1 Tbsp 

Cream the butter until smooth.
Add in the powdered sugar one cup at a time, alternating with a liquid. (powdered sugar, vanilla,  powdered sugar, milk,  powdered sugar)
Ice warm cinnamon rolls generously.
You can keep this icing in the fridge for 2 weeks.

Enjoy freshly baked Cinnamon rolls hot or cold , with or with out frosting :)




Custard bread rolls



Preparation time : 2 hours 
Makes : 50

INGREDIENTS:

For Preparing the custard :
 
Milk : 500ml (2 cups) 
Eggs : 2 
Sugar : 100g (1/2 cup) 
Cornstarch : 30g (3 1/2 Tbsp) 
Vanilla Essence : 1 tsp 
Salt : A pinch 

For Preparing the dough : 

Warm Milk : 200ml (1 cup) 
Yeast : 1Tbsp  
Sugar :100g (1/2 cup)  
Vanilla : 1 tsp 
Eggs : 2  
Butter : 90g (1 cup)  (soften at room temperature) 
Plain flour : 600g (about 4-5 cups) 

Topping

Egg yolk : 1 + Milk :  3 Tbsp 
Flaked :Almonds : 3 Tbsp

Method :

For preparing Custard : 
 
On the counter, take a pan add all ingredients listed for custard . Mix them well . Take it on to the stove to and Switch on the heat . Cook it for 5 mins stirring it continuously . When you think it became thick and done , take it off from heat. Pour it into a bowl and cover it. Keep it aside.

For  preparing Dough :

Add in flour. Make the dough. Keep it aside at least for an hour.
Once it is risen, dust some flour on the surface and roll it into a flat square of 1/2 inch thickness.

Now take the custard and spread it evenly on top of the rolled dough. Now make it like a swiss roll and then cut the log into one inch thick pieces. Cover and keep these aside for hour an hour to raise again. Give egg wash on top and sprinkle almond flakes .

In my house they felt these are less on sweet , thats why sprinkled sugar instead of almonds for second batch - so if you want to increase the sweetness , increase the amount of sugar that needs to be added in the recipe. 

Bake in preheated oven at 180 C for 35 to 40 mins Or until golden brown.
Enjoy freshly baked custard rolls hot or cold :)

Cheesy Garlic Bread




Preparation time : 10 mins + one hour + 15 mins - 1 1/2 hour
Serves : 4 people

Ingredients :

Yeast : 3/4 tsp
Sugar : 2 tsp
All purpose flour or maida : 1 1/2 cup
Salt : 1 tsp
Garlic paste or garlic powder : 1 tsp 
Water to knead the dough : Around 1/2 cup
Oil : 2 tsp 
Mozerilla cheese and Cheddar cheese : 3/4 cup
Boiled corn : 1/4 cup
Sliced Onion : 1/4 cup
Jalapeno / chili : 2 - 3 Tbsp
Garlic powder / chopped garlic : 1 tsp
Oregano : 1 tsp
Melted Butter : 1/4 tsp
Chili Flakes, Oregano, Garlic Flakes and PeriPeri mix - For Seasoning

Method: 

Take warm water, add in sugar and yeast, mix it well. 
Keep it in warm place for 10 mins for it to proof.

Take a big bowl. Add in all purpose flour , garlic paste 1 tsp or garlic flakes and salt , mix it well.
Add in the yeast mixture to flour make it as a dough.
knead it for 4 mins.
Add oil and knead it for one more minute.
cover with a damp cloth and leave it in warm place for one hour.
After one hour , take the dough, punch it out, knead for a minute or two.
Divide the dough into two equal parts.
Roll the dough , not too thin or not too thick and make 8 in circle.
on top of the rolled dough add cheese, garlic powder, oregano, corn or onion, chili or jalapenos .
Apply water around the edges and seal the dough.
Apply butter on top of the dough.
Sprinkle Garlic powder, oregano, red chili flakes and peri peri spice mix .
Make creases, just make ridges on top don't cut it all the way down.


On Stove Top :


Take a cooker, add salt about 1 and 1/2 cup ... Over salt place in a cup , wire stand or any thing to give it a little height.
Cover the lid of cooker without gasket and whistle .
Preheat it for 10 mins .
After 10 mins , place the bread sticks in hot cooker, cover it with the lid.
Bake it for 15 mins.


In Oven:


Preheat oven to 190 degrees C.
Place it in middle rack and bake it for about 15 mins.


Take it out , cut it after 5 mins.
Enjoy your Hot Garlic bread sticks ....

Eggless chocolate cake


Preparation time : 30 mins
Makes : serves 6 people

Ingredients :
 
All purpose flour or maida : 2 1/2 cups
condensed milk or plain milk : 200 ml 
Powdered sugar : 1 1/2 cup
Melted unsalted butter : 1 1/2 cup 
Cocoa powder : 1/2 cup
Baking powder : 1 Tbsp
Soda like coke or pepsi : 1 1/2 can


Method : 

Preheat the oven for 15 mins 400 F.
For this cake we have to use cookie sheet so prepare them by spraying with nonstick spray and keep aside.
In a bowl or mixer take 200 ml of condensed milk or plain milk, add powdered sugar and mix it
with whisk until well mixed, melt the butter and add it when warm to the sugar mixture and beat until mixed well.
Now take the dry ingredients 2 1/2 cups all purpose flour add 1/2 cup of cocoa  pwdr, add 1 tbsp
of baking powder and mix everything well.now add the wet ingredient in the flour mixture and just mix it.
now add the soda i.e. coke and mix everything well it should be not be too thick.
now divide the batter evenly on the two prepared sheets, just tap the sheets in order the spread evenly and
remove the air bubble.
Put these sheets in the preheated oven at 400'F for 15mins and switch of immediately and let it be in the oven for next 15 mins.do not remove them let them cook in switched off oven.remove them and let them cool
completely before doing any icing.

Eggless Apple Cake

More apples at home -- making more recipes with apple and definitely i will say this one is a very good and must to do recipe



Preparation time: 50 mins
Serves : 12 people

Ingredients :

Apple Puree : 1 cup (or) apples : 2 large
Whole wheat flour : 1 cup
All purpose flour or Maida : 1 cup and some for dusting
Sugar : 1 cup
Baking soda : ½ teaspoon
Baking powder : 2 teaspoons
Cinnamon powder : 3/4 teaspoon
Melted butter : 2/3 cup and some for greasing
Skimmed milk : 1 cup
Oil : 1 tablespoon 
Almonds : 15

Method :

Preheat oven at 180ºC or 350º F Grease a baking tin with some butter and dust with some refined flour.
Sift together wheat flour, maida, powdered sugar, baking soda, baking powder and cinnamon powder into a bowl. Mix well. (if you are using sugar add it to the bowl after everything is sifted)
Peel, roughly chop and puree the apples finely. Transfer into a bowl, add butter and milk and whisk well.
Add the flour mixture gradually and fold till well combined. Add oil and mix well.
Pour the batter in the prepared tin, tap, Add finely shredded almonds on top and put in the preheated oven and bake for 40 - 45 minutes or until a toothpick inserted comes out clean.
Remove from oven and let it cool down.
Once cool demould , cut and serve.

Chocolate cupcakes


Preparation time : 30 mins
Makes : 12

Ingredients : 

All purpose flour : 1 cup
Granulated sugar : 1 cup
Cocoa powder : ½ cup
Baking powder : 1 tsp
Baking soda : ½ tsp
Salt : ½ tsp
Espresso powder : ½ tsp
Milk : ½ cup
Vegetable oil : ¼ cup
Egg : 1
Vanilla extract : ½ tsp
Boiling water : ½ cup


Method :

Preheat oven to 350º F.
Place cupcake liners in muffin tin.
Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl.
Stir throughly flour mixture until combined well.
Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. 
Reduce speed and carefully add boiling water to the cake batter. 
Beat on high speed for about 1 minute to add air to the batter.
Evenly distribute cake batter. Each cupcake liner should be about ¾th full.
Place in the oven and bake 20 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow the cupcakes to cool completely.


If you wish then frost them with your choice of frosting.

Blue berry muffins


Preparation time : 40 mins
Makes : 11

Ingredients:

Butter : 6 Tbsp at room temperature
Sugar : ¾ cup
Eggs : 2
Sour Cream / milk / yogurt : ½ Cup
Vanilla Extract : 1 tsp
Fresh Grated Orange Zest : ½ tsp
Self Rising Flour : 1 ¼ cup
Fresh Blueberries : 1 cup

Method :

Preheat your oven to 350 degrees. Line a muffin tin with paper liners and set it aside.
In a large bowl, cream together the butter and sugar. Add the eggs, vanilla extract, sour cream and orange zest, whisk until the mixture is creamy and thick.
(Just mix them well with hand whisk only, no need of electric whisk in this recipe)
In a small bowl, toss together the blueberries with about 2 tbsp of the self rising flour. Set aside.
Add the remaining flour to the butter mixture and just mix until the flour is mixed through but don’t over mix.
Using a spatula, fold in the blueberries making sure not to burst them.
Using a large ice cream scoop or any other spatula, scoop even amounts in your prepared pan and bake for 20 to 25 minutes or until when a toothpick inserted in the center comes out clean.
Your muffins are ready to sever.

Sour cream cookies


Preparation time : 20 mins
Makes : 24

Ingredients :

All-purpose flour : 1 1/2 cups sifted
Baking powder : 1/2 tsp
Baking soda : 1/4 tsp
Salt : 1/4 tsp
Butter or regular margarine: 1/2 cup  softened
Sugar : 3/4 cup
Egg : 1 large
Sour cream : 1/2 cup
Vanilla extract : 1/2 tsp (or 2 teaspoons grated lemon peel)

Method :

Sift flour with baking powder, baking soda, and salt; set aside.
In large bowl of electric mixer, at medium speed, beat butter, sugar, and eggs until light and fluffy.
At low speed, beat in sour cream and vanilla until smooth.
Gradually beat in flour mixture until well combined. Refrigerate 1 hour.
Meanwhile, preheat oven to 375 degrees F. Lightly grease cookie sheets.
Drop batter by slightly rounded teaspoonfuls, 2 inches apart, onto prepared cookie sheets.
If you like then you can top them, by combining 1/4 cup sugar and 1/2 tsp of cinnamon. Sprinkle a little on unbaked cookies.
Bake 10 to 12 minutes, or until golden-brown.
Remove to wire rack; cool.

Apple chips

When you have lots of apples and tired of eating them , try this recipe, you sure will love it.
This is soooo good that me and my baby finished soon after baking these :)


Preparation time : 2 hours 30 mins
Serves : 2

Ingredients :

Apples : 2
Water : 2 cups
Lemon : 1
Cinnamon powder : 1tsp
Sugar : 1tsp 

Method :

Preheat oven to 275 degrees.
Meanwhile, cut apples into very thin slices, about 13-15 per apple. Then soak the slices in the water with the juice of one lemon.
The thicker the slice, the longer it will need baking to become crisp and chip-like.
The thinner slices will become crisper with less time and could get darker than thicker slices.
All this being said, the more your slices are consistent, the better. Without a mandolin they will all be slightly different in thickness and that is just fine. It adds variety.

Cover a baking sheet with parchment paper and place a footed cooling rack on top of the parchment.(or simply you can use a baking tray with aluminium foil)
Remove the apples from the water and place on paper towel. Blot dry. Place the slices on the rack.
Mix the cinnamon and sugar in a bowl and sprinkle lightly over all the apple slices, on both sides.
(Actually recipe calls for organic coconut sugar , if you have that then you can use)Bake the slices for 40 minutes, then flip, and continue to bake for 50 more minutes.
Turn the oven to "warm" setting, and let the chips continue to cook for up to 1 hour or until crispy.

Banana bread

The beauty of this banana bread recipe is you don’t need a fancy mixer! A fork to whisk the eggs and a sturdy spoon to mix the batter are all you need. The sugar amount is flexible. The original recipe calls for a cup of white sugar, but most people, including me, do just fine with 3/4 of a cup, and many are happy with a 1/2 cup.
You can toss in a cup of chopped nuts, raisins, or chocolate chips if you want, or put the batter into muffin tins and make muffins instead. You can even go a step further and make Chocolate banana bread.
No need for a mixer for this recipe! Clean-up is easy too, if you want, you can mix everything in one bowl.
The best bananas to use for banana bread are those that are over-ripe. The yellow peels should be at least half browned, and the bananas inside squishy and browning.


Preparation time : 1 hour 20 mins
Makes : one 4x8 inch loaf

Ingredients :

Very ripe bananas, peeled : 2 to 3
Melted butter : 1/3 cup
Sugar : 1 cup or less
Beaten egg : 1
Vanilla extract : 1 teaspoon
Baking soda : 1 teaspoon
Salt : pinch
All-purpose flour : 1 1/2 cups
Walnuts : 1/4 cup

Method :

Preheat the oven to 350°F (175°C), and butter a loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, chopped walnuts and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes) at 350°F (175°C), or until a tester inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)

Apple roll ups ( or ) apple fruit leather

When i prepared this , i am so pleased with the smell of apple and cinnamon... My house is filled with the pleasant aroma of these .......
I love soft and chewy dishes , this is one of them, so simple to prepare and yet tastes so great...


Preparation time : 3 hours approx
Makes : 2 trays

Ingredients :

Apples : 4
Granulated sugar : 2 Tbsp
Cinnamon powder : 1/2 tsp - 1 tsp
Water : 1/2 cup
Lemon juice : 1 Tbsp

Method :

Wash, peel and chop apples and toss them in lemon juice so that they don't turn brown.
Place them in a medium saucepan.
Add 1/2 cup water and bring to a simmer.
Cover and cook about 10 minutes or until soft.
Add sugar and cinnamon and mash.
Cook 2-3 more minutes on low heat, stirring occasionally.
Pour mixture into a blender and process until smooth.
Pour onto a baking sheet lined with parchment paper and spread with a spatula into a thin layer.
Bake at 200 degrees F for 2 to 3 hours or until its tacky but doesn't stick to your finger.
Cut them into stripes and roll them.

Fortune cookies

A Fortune cookie is a crisp cookie, with a piece of paper, a "fortune", on which is words of wisdom, an aphorism, or a vague prophecy. Fortune cookies are often served as a dessert in Chinese restaurant in the US and some other countries, but are absent in China. The exact origin of fortune cookie is unclear.




The best part about making your own fortune cookies is being able to put your own notes inside ! You can gift them to friends, family, co-workers, and so on, and make your notes however you'd like.
(Or you can even play game with it in your parties, instead of fortune put some game or puzzle in side and have blast !!! ;) )


I made these with a fortune on one side of paper and task on other side of the paper for a get to gather and its a charm to the party(As you can see in the above pic the task is to make a hair style) !!!

Preparation time : 1 1/2 hour
Makes : 3 to 4 dozens

Ingredients :

Egg whites : 3
Sugar : 3/4 cup
Butter : 1/2 cup melted
Vanilla Extract : 1/4 tsp
Almond Extract : 1/4 tsp
Water : 3 Tbsp
All purpose flour : 1 cup (5 oz)

Method :

Preheat your oven to 375 degrees F. Line a oven pan with parchment paper or a silicon mat, and have your fortune strips ready to go.

In a bowl or stand mixer , whip the egg whites and sugar on high speed for about 2 mins, until it's frothy. Whip in the melted butter, vanilla, almond extract, and water until incorporated . Add in the flour and mix until the flour "just" disappears.

With a tablespoon measure, spoon the batter onto the parchment paper and spread it out into an even 3 inch circle. I recommend not doing any more than 2-3 at a time. Since they set very quickly and you will not be able to fold more than that.

Bake your fortune cookies for 7-8 minutes, until the edge brown slightly. If you let them brown too much, they will snap when you shape them. Conversely, if they don't brown a little bit, they will also break (but tear, rather than snapping ).

When your fortune cookies are done baking, remove them from the oven and quickly flip the circle over, and fold your fortune cookie in half, into a semicircle. This is when you slip your note into the cookie ( quickly) because if you slip it in right at the beginning, the cookie will be too hot and your paper will stick to the cookie. place your semicircle onto the edge of a cup, and quickly fold the ends down, to shape into a fortune cookie.


Stick the cookie in a muffin tin to let it cool and hold its shape.

Repeat with the remaining batter.

Nutella star bread

When i first saw this , i thought of making it but then me and my husband are not that fans of chocolate and its too big for two of us to eat even, so i waited and finally i made it for a get together ... They all loved it , its so simple and easy to make and you can impress your friends and family too... here goes the recipe.


Preparation time : 15 mins + 90 mins
Serves : 16

Ingredients :

All purpose flour : 3 1/2 cups
Sugar : 1/3 cup
Salt : pinch
Butter : 2 Tbsp
Milk : 3/4 cup
Egg yolks : 2 cups (Reserve the egg whites)
Nutella : 1 cup (i used little less)
Yeast : 1 1/2 tsp

Method :

First , pour milk into a sauce pan or into a microwave bowl and heat it up until warm.
Take it out add yeast to the warm milk, one tbsp of sugar and pinch of salt.
Let it sit for 10 mins.
Mean while melt the butter.
Take a large bowl, add in flour, sugar, egg yolks, cooled melted butter, and the milk.
Mix everything very well.
(See the consistency , it will depend on your yolk size and all , for me i added some more milk )
Knead the dough for 7 minutes.
If your dough is smooth and just a bit sticky, put it into a bowl, apply little oil all over, cover with a lid, and set it in a warm place.
Let it raise for around 40 minutes ( It should double in size)

Place the dough on a lightly floured surface.
Punch it and take out the air.
Knead it for a minute.
Divide the dough into four equal parts .
(Take one and keep remaining dough in bowl covered with lid, other wise it will dry up)
Roll the dough into a circle of 2 to 3 mm thickness.
Place the dough circle on a baking paper or on an aluminium foil.
(This is important step bcoz as you move on ... at final step you can not lift it up)
Take a plate and mark it off on the first layer .
(i.e we are marking the circle, we may roll it un even right )
Put your chocolate spread into a bowl and microwave for 30 seconds.
Apply this spread on marked circle.
Repeat same for next two.
(melt nutella just before applying)
Now roll the next circle , mark it with plate , put it on the first one, apply chocolate spread.
Now roll the next circle , mark it with plate , put it on the second one, apply chocolate spread.
Now roll the final circle, mark it with plate, put it on top of all the layers.
Using a pizza cutter cut all un even edges.
By now what you got is layers of chocolate spread dough in a circle shape.


Pre heat the oven to 350 F.

Now take a small cup or glass and put it in center.
Divide the dough to quarters - start cutting from the marked circle ( remember to leave the center intact !) then , divide every quarter into four equal parts. At the end you should have 16 equal parts.
Take two parts of the cake in both hands and delicately twist them in opposite directions.
Attach both the ends.
Repeat with all pairs to from eight-armed star.
Yippie !!! your braided nutella star bread is almost all ready !

Brush surface of the bread with egg white before putting it into the oven.
(This will give nice golden brown color to your bread)
Bake it for around 15 to 20 minutes.

Super looking, and tasty nutella star bread is ready to serve !!

Spinach muffins or The Popeye muffins

Spinach muffins - This recipe is tailored specifically for using fresh spinach. With the help of the mashed banana and the cinnamon you can't even get the spinach taste. For kids it will simply be a Green Muffin . Do you remember the Popeye show.... whenever he needs energy, he eats a can of spinach. So these muffins are also called as The Popeye muffins.
These muffins are so simple and easy to prepare.


Preparation time : 40 mins
Makes : 12

Ingredients :

All purpose flour : 1/2 cup heaped
Whole wheat flour : 1/2 cup heaped
Sugar : 3/4 cup
Baking powder : 1 tsp
Baking soda : 1/4 tsp
Ground cinnamon : 1 1/2 tsp
Salt : 1/2 tsp
Oil : 1/4 cup
Milk : 1/2 cup
Fresh spinach : 1 1/2 cups
Banana : 1 (or) Mashed banana : 1/4 cup
Vanilla extract : 2tsp

Method :

Take a large bowl and add  all dry ingredients - flours, sugar, baking powder, baking soda, cinnamon powder, and salt, Mix them. Keep this aside.
In a blender, add oil, milk, spinach and blend on high for 30 sec or until completely pureed.
Add banana and vanilla and blend it once again.
Preheat oven to 350 degrees F and line a 12 cup muffin pan with paper liner.
Add this to the dry ingredients mixture and fold together with a spatula until completely combined.


Fill muffin cups about 2/3 (or) 3/4 full and bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
Let it cool for some time.
Your yummy and delicious muffins are ready to serve.

Pavva paneer or Empanadas

Empanada is stuffed bread or pastry baked or fried.
Empanadas are made by folding dough or bread with stuffing consisting with a variety of meat, cheese, vegetables, fruits and others.


Preparation time : one hour
Makes : 12

Ingredients :

Maida (or) All purpose flour : 1 cup
Room temperature Butter : 1 Tbsp +  3 Tbsp
Salt : 1/4 tsp
Lemon juice : 1 Tbsp
For Stuffing :
Paneer : 1/2 cup
Cheese : 3 slices
Capsicum : 1/2 (medium size)
Onion : 1/2 cup (chopped)
Coriander leaves : 2 Tbsp
Chili powder : to taste
Chili sauce : 1 Tbsp
Tomato ketchup : 1 Tbsp
Sabji masala : 1 Tbsp (or any other masala that's in your kitchen)
Salt : to taste

Method :

Take a bowl. Add flour, one Tbsp of butter , salt and mix it good so that all butter is incorporated in the flour.
Now add lemon juice and mix it once again.
Add water and make a nice dough. (dough should not be too soft or not too hard, it should be medium)
Cover it and let it rest for some time.

Take a bowl, add all the ingredients listed under stuffing.
Check for the taste.
Keep this aside.


Now take the dough .
Flour your surface , and roll your dough into a thin sheet.
Use more flour if needed, so it doesn't stick to the surface while rolling.
Apply a layer of butter on top of the sheet,
Then sprinkle flour on top (i.e a thin layer of flour on top).


Now roll the sheet into a log.
Keep this in fridge for one hour or so.( For the butter to be hard a bit and to rest the dough)


After 1/2 hour or one hour take the dough out and cut it into one inch pieces .


Preheat oven to 450 degrees Fahrenheit.
Roll these into a roti like round (Not too thin, not too thick)


Put 2 tsp of stuffing in centre, apply little water on the edge and seal the edges.


Bake it in oven for 10 to 15 mins or until its golden brown in colour.


(Or you can even deep fry these if you want)


Yummy and mouth watering pavva paneer or Empanadas are ready to serve...
Serve them hot .....

M and M Cookies


Preparation time : 20 mins
Makes : 20

Ingredients :

All purpose flour : 1 1/4 cups
Baking soda : 1/2 tsp
Brown Sugar : 1/2 cup
White sugar : 1/4 cup
Butter : 1/2 cup (at room temperature)
Eggs : one large
Vanilla Extract : 3/4 tsp
Salt : 1/2 tsp
M and M (or) Gems : 1/3 cup

Method :

Pre heat oven to 350 degrees.
Take a bowl. Add in brown sugar, white sugar, butter, eggs, vanilla extract.
Beat it with electrical mixer well (or mix them really really good till they all combined very well) .
Now add flour, baking soda, salt and beat it once again with electrical mixer (or mix it very well till you get a nice mixture)
Now add M & M 's and mix everything very well.
Drop table spoon of cookie dough on to baking sheet, spacing them about 2 inches apart.
Press few candy pieces on top of each cookie dough.


Bake the cookies for about 9 to 11 minutes or till the edges are lightly brown and centers are still soft.
Rotate the cookie sheet half way through to make sure cookies bake evenly.
Do not over bake or else the candy pieces dry out.
Let the cookies cool on the cookie sheet.
(If you want you can even add some chocolate chips in the dough - i personally liked them when chocolate chips added )

Pineapple cake

This is so simple and very easy to make. I like pineapple taste when it is used in cakes or pastries.


Preparation time : 40 mins
Serves : 12 people

Ingredients :

All purpose flour : 1 cup
Baking soda : 1 tsp
Sugar : 1 cup
Pineapple pieces : 1/2 cup
Pineapple juice : 1/2 cup
Butter : 1/2 cup
Eggs : 2

Method :

Preheat oven to 350 degrees F.
Mix all dry ingredients in a bowl.
Mix all wet ingredients in another bowl. Whisk them once.
Mix both of them and make nice batter.
Bake in oven for 30 minutes Or until toothpick inserted comes out clean.
Yummy yummy pineapple cake is ready to eat ....

Pretzels

Pretzel is a type of baked bread product made from dough most commonly shaped into a knot.
Pretzels originated in Europe, most likely among monasteries in the Early middle ages. Now a days pertzels are coming in different shapes. Salt is the most common seasoning for pretzels, complementing the soda that gives pretzels their traditional skin and flavor through the Malliard reaction; other seasonings include sugar, chocolate, glazes, seeds and / or nuts.


Preparation time : one hour
Makes : 12

Ingredients :

Warm water : 1 1/2 cup
Active dry yeast : 1 /8 tsp
Brown sugar : 2 Tbsp
Salt : 1 1/8 tsp
All purpose flour : 4 cups

Hot Water : 1 1/2 cup
Baking Soda :  1/4 cup

Butter : 1/4 cup melted (4 to 6 Tbsp)
Coarse Salt : 1Tbsp
Cinnamon sugar : 1 cup (Sugar 1 cup , Cinnamon 1 Tbsp)
Sesame seeds : 2 Tbsp
Jalapenos : 3 slices

Method :

Take a large mixing bowl, add 1 1/2 cups of warm water, add yeast to it.
Stir it to dissolve.
Add sugar, salt and stir again.
Add flour and knead dough until smooth.
Cover and keep it in warm place for at least 1/2 hour for the dough to raise.


Mean while take another bowl add 1 1/2 cups of hot water and add baking soda.
Mix it well and stir it often.
Preheat oven to 425 degrees.

When the dough is risen, knead it once.
Take a handful of dough and roll a long rope (about 1/2 inch or less thick) and shape.




(The longer and thinner you can make the dough rope, the more like Aunti anne's pretzels they will be.)



Dip pretzel in soda solution.


Place it on a cloth for 10 sec to catch excess water.


Put it on baking sheet.

Allow pretzel to raise again for 5 mins.
I sprinkled sesame seeds on some pretzels, and for some of them i sprinkle salt and for some i sprinkled jalapenos.
Most of them i just left them because i love cinnamon sugar pretzels :)



Bake in oven for 10 minutes or until golden.
Brush with melted butter and enjoy !
( I found they are really good when they are dipped in butter than brushing them with butter)

For parties or get to gathers you can just make pretzel pieces , make a rope cut it into 2 inches long pieces. After making 8 pretzels i made rest of the dough like this and you know these got consumed first because they are bite size pieces and we had them when moving around just like that.



Cinnamon sugar pretzel:
   Take two bowls , that are big enough to fit the entire pretzel.
   In first bowl melt the butter, in second bowl add cinnamon sugar.
   Take a pretzel dip it in butter and then in cinnamon sugar mixture.
   Coat both side of the pretzel very well.

Lovely pretzels are ready to serve.

Chocolate cornets

Chocolate cornets is a Japanese dish. They are delicious chocolate custard filled pastry cones.
The custard is smooth chocolate . It fills the cone to the brim for a rich taste of chocolate to go along with every bite of the pasty.



Preparation time : 40 mins + 1 hour
Makes : 4

Ingredients :

For pastry :

Milk : 1/4 +1/8 cup
Butter : 1 Tbsp
Sugar : 2 Tbsp
Salt : 1/4 tsp
All purpose flour : 1/2 cup + 1/4 cup
Yeast : 1/2 tsp + pinch

For Chocolate filling :

Egg Yolks : 1
Milk : 100 ml (or 1/2 cup)
All purpose flour : 1/2 Tbsp
Cocoa powder : 1/2 Tbsp
Corn flour : 3/4 Tbsp
Sugar : 1 1/4 Tbsp

Method :

For pastry :

Heat milk. (In microwave for 2 1/2 mins or on stove top while it is piping hot )
Take a big bowl , add milk.
Add sugar and butter.
Mix everything together until butter is melted.
Add 1/2 cup of flour, keep mixing it.
Let it sit for few mins, you don't want your batter to be too hot while you add the yeast.
The batter should be warm when you add yeast.
Now add yeast , salt , and rest of the flour (1/4 cup).
Mix it all together.
(This will be a sticky dough. knead it until it is not sticky any more)
Knead the dough for about 10 mins with flour until it is nice and smooth and stretchy.
(I used around 1/3 cup of flour for kneading)



Once you got your dough, put it in a bowl, cover it with cling film or put it in a box .
Place it in warm place for one hour for the yeast to raise.
Your dough will puff up after one hour.
Knead it once.
Divide it into 4 balls cover and set them aside for 10 mins.



Preheat the oven at 350 degrees .
Make 4 cones ( How to make cones is given below) .
Spray the cone with oil. ( i just greased them with hand).
Roll the dough say around 30 cm long.



Take your cone and roll the dough over the cone ( twist the dough over the cone )



Start at bottom and roll till you get five creases.
Make all of them like this.



(I just glazed them with the left over egg white that we got from the chocolate filling)
Place them in preheated oven at 350 degrees.
Bake them until they are golden brown in color or for around 20 mins.


Remove the cone moulds and keep the aside to fill mousse. 



Chocolate filling (Chocolate Mousse) :

Take a medium sized bowl.
Add egg yolk, sugar and whisk them together.
Boil the milk and slowly add it to the bowl, (spoon by spoon) so that it don't cook our egg mixture.
Half way through, add our rest of the ingredients flour, cocoa powder, corn starch.
Mix them up.
Add rest of your milk while mixing.
Now shift the mixture into a pan.
Cook it on medium flame stirring continuously until you get thick pudding consistency.
(After it cooked, to cool it you can place this bowl in a cool ice water bowl And that is optional)



After it cooled, put it in a cone.

Fill the pastry with the chocolate mousse.



Your Yummy Yummy Chocolate cornets are ready to eat.

How to make cream horn molds :
Here is what you need - Craft paper(any thick paper) and aluminium foil .
Mark a sheet of thick square paper with a diagonal line.
Roll it up into the cone covering the diagonal line with the edge by a quarter inch.
Cut top of the cone (i.e. part of the cone ).



Staple the overlapping edge.
Wrap the paper cone with a sheet of square aluminum foil.
Fold the top of the foil into the cone.
Squeeze the foil into the overlapping part of cone.



Now hand made mold is ready to use.
Make 4 like this.
