Garlic paratha (or) Garlic roti


Preparation time : 20 mins
Serves : 2

Ingredients :

Pepper : 1tsp crushed
Cumin powder : 1 tsp
Rice flour : 1 Tbsp
Ghee : 2 Tbsp
Oil : 1 Tbsp
Salt : To taste
Wheat flour : 2 Cup
Garlic : 8 crushed
Dry mango powder / amchur powder : 1 tsp

Method :

Take a bowl add whole wheat flour, salt, oil, water make this in to soft dough, keep it aside.
Take a bowl add ghee, salt, rice flour, mix this well in this add cumin powder, crushed pepper powder, amchoor powder, garlic crushed (put it in to the blender) mix it well

Divide the dough in to equal portions, Roll out each portion into thin round roti.
Spread garlic mixture over the roti.


Roll the paratha and fold it like a fan fold and press with hand, using rolling pin roll the paratha thin round.


Cook the paratha till brown spots appears on both the sides.
Serve this hot with curd and onions.

egg paratha - 1


Preparation time : 20 mins
Makes : 2

Ingredients:

Egg : 2 boiled
Pepper powder : 1/2 tsp
Green chillies :  1 chopped
Coriander leaves : 1/4 Bunch chopped
Salt : To Taste
Chat masala : 1/2 tsp
Cumin powder : 1/2 tsp
Garam masala : 1/2 tsp
Red chilly powder : 1 tsp
Butter :1 tsp
Wheat flour dough or atta dough : 1 cup or so
(Take 3/4 cup of wheat flour add salt , water and make it into a smooth dough)

Method :

Finely grate the boiled egg.
Take a bowl and add grated egg, pepper powder, green chillies, coriander leaves, salt and mix it nicely.

Take a bowl and add chat masala, cumin powder, garam masala, red chilly powder and mix thoroughly.
Roll the chapathi like a thin sheet and apply butter on it.
Sprinkle the masala and cut into 6 to 8 pieces and make 2 portions of 4 each .
In one portions place the egg masala mixture and place another portions on top of it.
Press the edges using hands and just roll edges of the paratha.
Heat the tawa and place the paratha and cook it on both side using the butter.
Now the hot egg parath paratha is ready to serve with any chutney or raitha or curry.

Dal dhokli (or) dal dhokri


Preparation Time: 30 minutes
Serves : 4 to 5

Ingredients:

For Daal:

Toor Daal : 1/2 cup dry (washed, soaked for 30 mins (optional) and drained)
Whole Raw Peanuts : 2 Tbsp
Fenugreek Seeds (Methi) : 1/8 tsp
Water : 2 cups

For Dhokli:

Chapati Flour (Whole Wheat) : 1 cup
Chickpea Flour (Besan) : 1 Tbsp
Ajwain (Carom Seeds) : 1/4 tsp
Turmeric Powder : 1/4 tsp
Salt : 1/2 tsp
Red Chili Powder : 1/2 tsp or to taste
Oil : 1 Tbsp
Warm Water : 1/4 cup + 2 Tbsp

For Seasoning:

Oil : 1 Tbsp
Ghee (Clarified Butter) : 1 tsp
Cinnamon Stick : 1 inch piece
Cloves : 4
Mustard Seeds : 1/2 tsp
Ajwain (Carom Seeds) : 1/4 tsp
Dry Red Chili : 1
Asafoetida (Hing) : 1/4 tsp
Turmeric Powder : 1/4 tsp
Curry Leaves : 1 sprig
Ginger : 2 tsp (minced)
Green Chilies : to taste (minced)
Tomato : 1 large, chopped
Water : 5 cups
Salt : 2 tsp or to taste
Jaggery : 2 Tbsp or to taste (sugar or brown sugar may be substituted)
Tamarind Pulp : 1 Tbsp or to taste
Red Chili Powder : 1/2 tsp or to taste
Garam Masala : 1 tsp
Cumin Powder : 1 tsp
Coriander Powder : 2 tsp
Lemon/Lime Juice : to taste
Cilantro (Coriander Leaves) : chopped, for garnishing
Ghee or Oil : drizzle over the top at the time of serving

Method:

In a pressure cooker, add drained Toor Daal, Peanuts, Fenugreek Seeds and 2 cups Water. 
Pressure cook for 2-3 whistles for soaked daal or 5-6 whistles for unsoaked daal. Allow pressure to go down by itself before opening pressure cooker.

In a bowl, add Chapati Flour, Chickpea Flour, Ajwain, Turmeric Powder, Salt and Red Chili Powder – mix well.
Add 1 Tbsp Oil and mix again to incorporate the oil into the flour.
Add Warm Water little at a time to form a stiff dough. Knead for 1-2 minutes.
Drizzle a few drop of oil and coat the dough ball. Cover and let dough rest for 15-20 minutes.

In a large pot, heat Oil and Ghee. Once hot, add Cinnamon Stick, Cloves, Mustard Seeds (allow them to pop), Ajwain, Dry Red Chili, Asafoetida, Turmeric Powder, Curry Leaves, Ginger and Green Chilies. Mix.
Immediately add Tomatoes. Mix.
Add cooked Daal, 5 cups Water, Salt, Jaggery, Tamarind Pulp, Red Chili Powder, Garam Masala, Cumin Powder and Coriander Powder.
Allow mixture to come to a boil.
Meanwhile, knead dough once again and divide into 2-3 portions. Lightly dust rolling surface and roll out dough balls into thin discs (thinner than chapati using some flour). With a sharp knife or pizza cutter, cut dough into small diamond shapes (roughly 1 inch pieces).
Once Daal comes to a boil, reduce heat to medium and add in dough diamonds while stirring. Roll out remaining dough and add diamonds quickly.
Cover and cook for approximately 30 minutes, stirring in between. 
Dhokli should not have a raw taste.
Once cooked, switch off stove and add Lime or Lemon juice to taste.
At the time of serving, garnish with Peanuts, Chopped Onions, Cilantro Leaves and drizzle Oil or Ghee over the top.

Rice stuffed paratha


Preparation time : 20 mins
Makes : 3

Ingredients :

Cooked rice : 1/2 cup
Onion : 1/4 cup
Cooked potato pieces : 1/8 cup (optional)
Carom seeds : One pinch
Coriander powder : 1/4 tsp
Green chili : to taste
Salt : to taste
Turmeric powder : pinch
Cumin powder : 1/4 tsp
Chili powder : 1/4 tsp
Coriander leaves : 1 Tbsp
Wheat flour : 1/2 cup

Method :

Take atta, salt and tsp of oil in a bowl. Rub it with your fingertips. Then start adding little water at a time and knead the dough, it should be smooth and soft.
Cover the dough and let it rest for 20 minutes.

Take a bowl, add left over rice and potatoes. 
Mash them with your hand nicely.
Add in chopped onion, green chili, coriander leaves, salt, red chili powder, coriander powder, cumin powder, carom seeds.
Mix them good.


Divide the stuffing into three equal portions. Knead the dough once again and divide it into three balls and flatten it out.
Dip one flatten disc into dry flour and roll into 4 inch diameter circle.
Put one portion of stuffing in the center, Gather the edges and pinch it to seal it properly. Flatten it 
Dip again into dry flour and roll into 6 inch diameter paratha.

Heat the tawa or pan on medium heat. Once hot place the paratha and let it cook for few seconds, you will see few bubbles on top surface.
Then flip, cook other side.
Apply some oil, flip and cook by pressing.
To cook other side, again apply some oil, flip and cook by pressing with spatula.
Remove it from the pan and repeat the same for rest of the parathas.

Enjoy your paratha's hot with your choice of Raita :)

Onion paratha

Preparation time : 20 mins
Makes : 2

Ingredients :

Onion : 1/2 cup
Carom seeds : 2 generous pinches
Coriander seeds : 1/2 tsp
Green chili : to taste
Salt : to taste
Cumin powder : 1/4 tsp
Garam masala powder :1/4 tsp
Chili powder : 1/4 tsp
Coriander leaves : 1 Tbsp
Wheat flour : 1/2 cup

Method :

Chop onions , add salt and keep this aside for 15 mins.
Water will come out from onions , use that water to make chapati dough with the wheat flour.
Take a bowl add all of the remaining ingredients, mix them good.

Divide the stuffing into two equal portions. Knead the dough once again and divide it into two balls and flatten it out.
Dip one flatten disc into dry flour and roll into 4 inch diameter circle.
Put one portion of stuffing in the center, Gather the edges and pinch it to seal it properly. Flatten it using your hand.
(This paratha tastes good , if the stuffing is more)


Dip again into dry flour and roll into 6 inch diameter paratha.

Then flip, cook other side.
Apply some oil, flip and cook by pressing.

Sweet Chapati (or) Sugar paratha (or) Panchadara chapaatilu

This is my brother's favorite chapati. When my mom makes these , we used to hog on these chapati's in my child hood :)


Preparation time : 10 mins
Makes : 6

Ingredients :

Ghee or oil : 1 tablespoon + more for frying the parathas
Sugar : 10 Tbsp
Atta or Wheat flour : one cup
Salt : pinch
Water : As needed ( less than 1/2 cup)

Method :

Take atta, salt and ghee in a bowl. Rub it with your fingertips. Then start adding little water at a time and knead the dough, it should be smooth and soft.
Cover the dough and let it rest for 10 minutes.

After 10 minutes, Knead the dough once again and divide it into 6 balls and flatten it out.
Dip one flatten disc into dry flour and roll into 4 inch diameter circle.
Cut it from center to the end and make a cone.
Put one or two Tbsp of sugar in the cone, Gather the edges and pinch it to seal it properly. Flatten it using your hand.



Dip again into dry flour and roll into 6 inch diameter paratha.
Cook these in a low flame to get nice crispy paratha's.
Heat the tawa or pan on medium heat. Once hot place the paratha and let it cook for few seconds, you will see few bubbles on top surface.
Then flip, cook other side.
Apply some oil, flip and cook by pressing.
To cook other side, again apply some oil, flip and cook by pressing with spatula.
Remove it from the pan and repeat the same for rest of the parathas.

When ever you are making this make sure that you are making these at the end of your normal chapati's coz when we cook these chapati's some caramelized sugar sticks to tawa.

Gobhi paratha


Preparation time : 30 mins
Serves : 2

Ingredients :

Oil : 1 tablespoon + more for frying the parathas
Cumin seeds : ½ tsp
Ginger paste or freshly grated ginger : 1 ttsp
Green chili : 1 small, finely chopped
Gobi or cauliflower : 2 cups, grated finely
Salt : to taste
Coriander powder : 1 tsp
Turmeric powder : ¼ tsp
Red chili powder : 1 tsp
Garam masala : ½ tsp
Amchur powder : 1 tsp
Cilantro or coriander leaves : few sprigs, finely chopped

Method :

Grate cauliflower using grater or food processor, very finely.
Heat the oil in a pan on medium heat. Once hot add cumin seeds. Once they sizzle, add chopped chilies and ginger paste, fry for few seconds.
Mix in grated gobi with some salt. Cook for few minutes.
Then add all dry spices and mix. Cook till it dries out, means no moisture in the mixture.
Turn off the stove and lastly mix in chopped cilantro. Keep it aside to cool.

Take atta, salt and oil in a bowl. Rub it with your fingertips. Then start adding little water at a time and knead the dough, it should be smooth and soft.
Cover the dough and let it rest for 20 minutes.

After 20 minutes, stuffing is cooled down, divide into 6 equal portions. Knead the dough once again and divide it into 6 balls and flatten it out.
Dip one flatten disc into dry flour and roll into 4 inch diameter circle.
Put one portion of stuffing in the center, Gather the edges and pinch it to seal it properly. Flatten it using your hand.
Dip again into dry flour and roll into 6 inch diameter paratha.

Muli paratha


Preparation time : 30 mins
Serves : 3 

Ingredients :

Wheat flour : 1 cup
Oil : 1 Tbsp
Water : as needed (usually 40% of flour)

Radish : 2 or 3 (Grated radish : 1 cup)
Chopped onion : 1/4 cup (optional)
Cumin powder : 1/2 tsp
Red chili powder : 1/2 tsp (or to taste)
Amchoor powder : 1/2 tsp
Salt : 1/2 tsp (or to taste)
Finely chopped green chilis : 1/2 tsp (or to taste) 

Method :

Take wheat flour and oil, mix well.
By adding water make dough that is medium soft - neither too soft nor too hard.
Cover and let it rest for 15 mins.
Mean while prepare the stuffing.

Grate Radish finely.

Take a pan heat it.
Add 1/4 cup finely chopped onion if using.
Add radish and fry it till tis cooked nicely.
Add spices - cumin powder, red chili powder, amchoor powder, finely chopped green chili and salt.
Let it cook slowly and let all the moisture evaporate.

Take chapati dough and stuffing equal sized roundels.
Stuff radish mixture in chapati dough.
Seal the edges.
Carefully roll it into a disk .
Put it on hot tawa.
When half cooked turn and add little butter.
Turn again and add butter to this side also.
Cook them good on both sides.
Your paratha's are ready to serve.
Enjoy your dish with yogurt/curd :)

gobhi paratha


Preparation time : 30 mins
Serves : 2

Ingredients :

For stuffing :
Cauli flower : 1 (or) 2 cups shredded
Cilantro / coriander leaves : 2tbsp
Green chili : 2 (or) to taste
Salt : to taste
Cumin seeds : 1/2 tsp
Ajwain seeds : 1/2 tsp

For dough :
Wheat flour :  1 1/2 cups
Salt : 1/2 tsp
Water : 1/2 to 3/4 cup

Method :

Make dough :
Take a bowl, add wheat flour and salt mix it.
Add water slowly and make soft dough.
Cover it and let it rest.

Make filling :
Shred cauliflower with grater or food processor.
Take it into a bowl.
Add salt, freshly chopped coriander leaves, finely chopped green chili, ajwain seeds and cumin seeds , mix it good.
Keep it aside for 5 mins.
Squeeze it a bit.

Take one chapati ball, roll it a bit.
Stuff the prepared stuffing in center.


Seal it by lifting the edges up.
Make a nice round again.


Roll it into a thin circle, by dusting with some flour / atta.


Roast it on a tawa using little oil or ghee.


Serve it hot with any chutney or yougurt.

Batura

This is my 150th post :)

Bhatura is a traditional North Indian Punjabi classic Indian bread. When fried in oil bhatura puffs and it is nice crispiness outside and soft inside that just melts in your mouth. This is served with chickpea curry popularly called as chole. At most of the restaurants this is known as CHOLE BHATURA. Chole bhatura makes a sumptuous meal and is filling.

A huge bhatura looks some what like puri but big in size. Many gets confused or do not know the difference between a poori and a bhatura. It is just simple, bhatura is made of all-purpose flour adding baking powder and yogurt to give a sweet and salty taste and is huge in size where as puri is made of whole wheat flour / atta and is small in size. Puri can be eaten with any Indian vegetable gravy dish but bhatura is mostly combined with / served with chole.


Preparation time : 2 hours : 10 mins
Serves : 2 to 3
Makes : 11 or 12

Ingredients :

Maida / All purpose flour : 2 cups
Sooji / Semolina : 1/4 cup
Baking powder : 1/4 tsp
Sugar : 1 tsp
Salt : to taste / 1 tsp
Butter milk : 3/4 cup
Milk : 1/4 cup (if needed)

Method :
Take a bowl, add all purpose flour, semolina, baking powder, sugar , and salt.
(Adding semolina is a tip, that makes your bhatura to stay puff for some time, your bhatura don't go flat soon if you add sooji :) )
Mix them once.
Add butter milk, mix it good.
Make a dough similar to poori dough.
If your dough is too thick, use little milk to make your dough.
It should be a tight dough.
Knead it once, sprinkle some oil on top.
Cover it and let it rest for at least 2 hours.
After resting, take the dough, divide it into small lemon size balls.
Roll it evenly , not too thin or not too thick.
Deep fry it hot oil.
Serve it hot with chole curry .
Chana Batura is gernerally served with fresh cut onions, green chili, and half cut lemon .

Left over chapati sweet

This is a nice sweet prepared with left over chapati's.
Today, i don't feel like drinking milk nor eating like cereals, so i searched my kitchen and i have a left over chapati , so i prepared this....
This tastes good..... and you can have this as break fast , as snacks or even as dessert :)


Preparation time : 15 mins
Serves : 1

Ingredients :

Chapati : 1
Milk : 1 cup
Sugar : 2 tsp
Cardamom powder : 1/2 tsp

Method :

Take a pan heat it.
Add milk , let it boil for 5 mins.
Cut chapati into small pieces and add these pieces to boiling milk.
Let it to boil for 5 to 10 mins.
Switch off the flame, add cardamom powder.
Serve it hot :)

Malabar paratha


Makes : 4

Ingredients :

Maida (or) All purpose flour : 1 cup
Water or milk : 1/4 cup approx
Salt : 1 tsp
Sugar : 1 tsp
oil : 1/4 cup

Method :

Take bowl , add maida,salt,sugar and mix it with water or milk.
Make a smooth , stiff dough.
Apply oil to it and cover it with cloth and then keep a lid on it.
Rest for 15 to 30 mins.
Knead the dough again and make into 4 balls.
Apply oil to them.Cover them and Rest for 15 mins.
After 15 mins, apply oil to the surface and roll the dough very thin.
Take that and fold back and forth.
Then Roll into round.Apply oil,cover and rest it for 15 mins.
With that Dough using roller make paratha.
Fry on tawa.
Serve when hot.(It's good when it is hot)
And i don't say that it will take less oil, for making this paratha you need considerable amount of oil at each stage.

Kottu paratha


Serves : 2
Preparation time : 15 mins

Ingredients :

Chapati : 4
(You can use any kind of chapati or paratha.
and You can make this with leftover chapatis too.)
Onion : 1
Tomato : 1 1/2
ginger garlic paste : 1tbsp
Green chilli's : 2 very finely chopped
mustard seeds : 1/2 tsp
urad dal : 1tsp
curry leaves : 6
coriander leaves : 2tbsp chopped
Spice powders 1/2 tsp each
you can use any spice powder of your choice
Garam masala , chat masala, chana masala, coriander powder, cumin powder, red chili powder,pepper powder, chicken masala.............
Eggs : 4

Method :

Heat a pan.
add 2 tbsp of oil.
Add mustard seeds, urad dal, curry leaves.
Add onions and let them cook till translucent.
Add green chilli's , and ginger garlic paste.
Saute them and then add tomato.
Cook till they are soft.
Now add spice powders what ever you want.
I added garam masala, little chili pdr , pepper powder and chat masala.
Add in the salt.
Now add the chapati or paratha pieces.
check for seasoning.
Let them cook for 5 mins.
(you want spice level to be a bit high, because after adding eggs it will be reduced)
Now beat eggs into the pan and mix.
Cook the mixture till eggs are nicely cooked.
( If you are a strict vegetarian you can skip eggs )
Now crumble it with a spatula.
Add coriander leaves , mix it.

Serve it hot with Curd or Raita.
You can have it for breakfast, lunch, snacks or ever as dinner.
