Koyya rotti


Preparation time : 20 mins
Serves : 1 or 2

Ingrediens :

Urad dal flour : 1/2 cup
Idli ravva : 1/2 cup
Salt : to taste
Chili powder : to taste
Hing : 2 pinches
Jeera / cumin seeds : 1/4 tsp
Water : as needed

Method :

Take a bowl, add all the ingredients except water, mix them once.
Now slowly add water to get idly batter consistency , mix well and set aside for 10 minutes.
(Add chili powder a bit more to get nice taste)
Heat kadai , add 2 Tbsp of oil, add the batter.
Cover and cook on medium heat for 10 mins.
After 10 mins turn it to the other side and cook it with out lid for 5 to 10 mins.
Your rotte or rotti is ready to serve.
Enjoy your dish with curd or pickle or any chutney :)

bobbara rotte

Bobbarlu called as cowpeas in english which are high in protein and fiber and have good health benefits. This spicy cake made with cow peas tastes delicious. Try to give it a try and you wont be disappointed. 


Preparation time : 8 hours + 20 mins
Serves : 4 to 5

Ingredients :

Bobbarlu or Cow peas : 1 cup
idli ravva : 1 cup
salt : to taste
chili powder : to taste
hing : pinch


Method :

Soak bobbarlu for 8 hours or over night .


Grind them to nice paste using wet grinder or mixi.


Add ravva , salt , chili powder and hing to the batter.
Give it a good mix.
Heat a kadai , add coupe of table spoons of oil, add 2 to 3 laddles full of  batter that we prepared, cover it with lid and cook it on a low heat for 12 mins and turn , cook for another 10 mins.
Serve it hot as it is or with any pickle, ,chutney, curd, or idli kaaram.

Rice flour Pulla vuppindi

This is one of those dishes , only prepared at my place....
This is favorite dish of one of my brother.. we call it as pulla upppindi ...



Preparation time : 40 mins
Serves : 2

Ingredients :

Rice flour : 2 cups
Water : 2 1/2 cups
Tamarind pulp : lemon size
Onion : 2
Garlic cloves : 4
Red chili : 10
Salt : to taste
Turmeric : pinch
Jaggary : 1/2 tsp
Chana dal : 2 tbsp
Urad dal : 1 tsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Curry leaves : few
Grated coconut : 1 tbsp
Fried sesame seed powder : 1 tbsp

Method :

Take a bowl soak tamarind with half of the water.
Make juice out of it, add salt, turmeric, jaggary .
Add remaining water and mix everything well. (The concentration of this liquid should be little more)
Keep this aside.
Take a pan, add 4 tbsp of oil, add mustard seeds, cumin seeds, urad dal, chana dal, curry leaves, split red chili one by one while sauteing them a bit.
Add sliced onion, and garlic.
Saute them for a while , till they are golden brown.
Now add the tamarind juice that we prepared earlier to the pan.
Add coconut and fried sesame seed powder.
Let it come to a boil.
Check for taste.
Now add rice flour and mix it.
Keep the flame in low and mix it for every 5 mins for 20 to 30 mins.
When it is fried very well and you don't get any raw smell then it is done.
Serve it hot with any pickle or curd.

Pani poori / Gol Gappa

The pani puri also known as gol gappa is a popular street snack from India.
The English meaning of golgappa is "watery bread" or "crisp sphere eaten."


Pani puri :

Puri's : 10 
Pani : 2 cups
Potato filling : 1/2 cup
Chopped onion : 1/2 cup
Sweet Chutney : 4 Tbsp (optional)

Method :

Take a puri and pop a whole in centre. 
Stuff it with potato filling and add chopped onions.
Pour pani in the puri (or dip puri in pani and take it out)
If you are using sweet chutney add some.
Enjoy your yummy yummy pani puri :)

Puri Recipe for Pani puri :


Preparation Time : 30 mins + Cook Time: 20 mins plus 20 mins bake time
Makes : 40 approx 
Ingredients:

Fine Sooji : 1/2 cup
Salt : 1/4 tsp
Baking Powder : 1/8 tsp
Warm Water : 1/4 cup
All-Purpose Flour (Maida) : 1 Tbsp
Oil :1 tsp and Oil : for deep frying

Method:
In a shallow mixing bowl, add Sooji, Salt and Baking Powder. Mix well.
Add warm water and soak the sooji.
Sprinkle All-Purpose Flour and knead the sooji for 3-4 minutes until smooth and firm.
Drizzle 1 tsp Oil and knead again for 3-4 minutes.
(Kneading is the key)
Wrap dough in a plastic wrap and let it rest for 20 minutes.
With 5 minutes left, start to heat oil for deep frying.

Divide dough in small bits and roll out each puri or roll a big round and use a cookie cutter or other cutting device to cut round puris. Oiling or dusting rolling surface will make rolling easier.



Deep fry puris until light golden brown and crisp and remove them onto a paper towel lined baking sheet.
Once all puris are fried, remove the paper towel and place baking tray into a preheated (200 degrees F) oven for 25-30 minutes or until all the moisture from the puris is gone.
Bring them to room temperature before storing in an air tight container.

Pani recipe for pani puri :


Ingredients :

Water : 5 cups
Mint leaves : 1 cup
Coriander leaves : 1/4 cup
Green chili : 6 (or to taste)

Red chili flakes : 1/2 Tbsp
Lemon : 1 tsp
Tamarind paste : 2 Tbsp
Amchoor powder : 1 tsp
Chat masala : 1 tsp
Black salt : 1 Tbsp
Salt : 1 Tbsp
Hing : 1/2 tsp
Black pepper : 1/2 tsp
Cumin powder : 1 tsp
Coriander powder : 1 Tbsp
Ginger powder : 1 tsp (or you can even use small piece of ginger and add it while grinding)

Method :

Take a blender and add mint leaves, coriander leaves and green chili's.
Grind it into a fine paste while adding 2 Tbsp of water.
Take a bowl, add water and then this paste.
Now add all other remaining listed ingredients.
Mix it good and give it a taste test.
Adjust the taste.
This can be refrigerated for 10 day or you can even freeze it for 3 months.

Potato filling recipe for pani puri :

Ingredients :

Boiled potatoes : 6
Boiled Chana : 1/2 cup (Chick pea/ black chick peas/ yellow peas - you can use any of these)
Chopped onion : 1/4 cup
Salt : to taste
Black salt : to taste
Red chili flakes : 1 tsp
Cumin powder : 1 tsp
Coriander powder : 1tsp
Amchoor powder : 1/2 tsp

Method :

Take a bowl, add boiled potatoes and mash them a bit.
Add all other ingredients listed and mix it very well.
(You can even add a tsp of  mint, coriander paste that we made for pain)
Give it a taste test and adjust the seasoning as per your preference.


Enjoy your heavenly delicious pani puri :)

wheat sooji upma (Muthaka Goduma nooka upma) (or) Tomato upma


Preparation time : 20 mins
Serves : 4

Ingredients :

Wheat sooji : 1 cup
All kinds of vegetables
Carrot,capsicum,Onion,tomato,beans,peas,cauliflower,potato
Tomato puree : 4 cups
Water : 2 cups
salt to taste
cashew nuts : 10
turmeric : 1/4 tsp
Garam masala : 1/4 tsp
oil : 1 tbsp

For Tampering
mustard seeds : 1/2 tsp
urad dal : 1/2 tsp
jeera : 1/2 tsp
Ginger : 1" piece
Green chili's : 2
curry leaves : one spring
Coriander leaves : 2 tbsp

Method :

Chop all the vegetables.

Take pan, add oil , when oil is hot add ingredients listed for tampering and cashew nuts.
Add Vegetables , turmeric powder, salt and let them cook for 5 mins.
Add garam masala.


Take a rice cooker and add sooji, tomato puree .

Add those sautéd vegetables to the rice cooker.

Check for seasoning.
(Or simply at starting only you can use rice cooker for sautéing vegetables also)
Cover and cook for two whistles on medium flame.
Once cool down, open the lid and add chopped coriander leaves.
Serve it with plain yogurt.
Yummy yummy tomato upma is ready to serve :)

Chenaga pindi rotte


Preparation time : 20 mins
Serves : 1 or 2

Ingrediens :

Besan : 1/2 cup
Idly ravva : 1/2 cup
Salt : to taste
Chili powder : to taste
Hing : 2 pinches
Turmeric :  pinch
Jeera / cumin seeds : 1/4 tsp
Water : as needed

Method :

Take a bowl, add all the ingredients except water, mix them once.

Bread omelet road style



Preparation time : 5 mins
Makes : 2

Ingredients :

Bread slices : 2
Eggs : 2
Milk : 1/4 cup
Garam masala : 1/4 tsp
Chili powder : 1/4 tsp
Salt : to taste
Chopped Onions : some for garnishing

Method :

Take a bowl and add eggs, milk, garam masala, chili powder and salt.
(  I even added some spinach )
Beat it well with a fork.
Heat a tawa , grease it with oil, add half of the egg mixture.
Put a slice of bread on top.
Let it cook on slow flame.
When half done, seal the upper part of the bread with the left over edges of the omlet.
Turn it and let it cook on the other side.
Take it off the flame , into a serving plate.
Garnish with some chopped onions.
Serve it with ketchup .

Dibba Rotte



Preparation time : 20mins + 12 hours
Serves : 5

Ingredients :

Urad dal : 1/2 cup
Idli Ravva : 2 cups
Salt to taste
Oil : as needed

Method :

Soak urad dal in water over night or for minimum of 6 hours.
Soak Ravva separately for minimum of 2 hours.
Grind soaked urad dal into a very fine paste by adding little by little water.
Take entire batter to a bowl with your hand,mix soaked ravva in this.
Add salt to the batter.
Take a kadai, heat it, pour 3Tbsp of oil, (If you want you can add some cumin seeds).
And now pour 2 cups of batter.
Put it in medium low flame, cover and cook for 15 to 20 minutes.
Turn and cook for 5 more minutes.
Serve them with chutney or idli podi or any other side dish.
My favorite side dish for this dish is vulli kaaram.

Sago curd patties (or) Saggubiyyam billalu (or) tapioca patties


Preparation time : 8 hours + 15 mins
Serves : 2 to 3

Ingredients :

Tapioca seeds : 1/2 cup
Curd : one cup
Rice flour : 1/2 cup
Cumin seeds : 1/4 tsp
Green chili paste : 1/2 tsp (or) to taste
Chopped Onion : 1/4 cup
Grated carrot : 1/4 cup
Grated coconut : 1/8 cup
Coriander leaves : 2 Tbsp
Salt : to taste

Method :

Soak tapioca seeds in curd for 8 hours. 
After 8 hours, take a bowl add add soaked sago with curd and mix all other ingredients.


The batter should not be too thick or too thin.
Heat a tawa and on medium flame and pour batter on to it.
Cover and cook till the other side is little golden brown in color.
Take off the lid, turn and cook for some more time.
Your patties is ready to serve.

Tomato idly



Preparation time : 20 mins
Serves : 2

Ingredients :

Idly : 10
Onion : 4 medium size
Tomato : 3 medium size
Urad dal : 1/4 tsp
Cumin seeds : 1/4 tsp
Mustard seeds : 1/4 tsp
Garlic clove : 1
Ginger : 1 " piece
Garam masala : 2 pinches
Salt : to taste
Chili powder : to taste
Coriander leaves : few
Oil : 3 tbsp

Method :

Cut the idly into cubes.
Take a pan, add oil, add mustard seeds, urad dal , cumin seeds, crushed ginger garlic one by one while sauteing them a bit.
Add onion cubes and fry it , when it is half done add cubed tomato.
When tomato is cooked add diced idly's.
Add salt , chili powder, garam masala and mix every thing .
Keep the flame in low and cook it for 2 to 3 mins.
Remove the lid , add freshly chopped coriander leaves, mix it once.
Your dish is ready to serve.
Serve it hot.

Curd idly


Preparation time : 5 mins
Serves : 2

Ingredients :

Idly : 10
Curd : 2 cups
Green chili : 1
Curry leaves : few
Mustard seeds : 1/4 tsp
Cumin seeds : 1/4 tsp
Urad dal : 1/4 tsp
Ginger : 1/2 inch
Salt : to taste
Grated coconut : 1 tbsp
Coriander leaves : few

Method :

Take a pan, heat it , add little oil, add mustard seeds, urad dal, cumin seeds, curry leaves , green chili , ginger one by one while sauteing them a bit.
Take curd into a bowl, add this seasoning to it.
Add salt , grated coconut, freshly chopped coriander leaves, mix it good.
Add hot idly's to it .
(If your idly's are cold , them heat them once before adding)
(Keep them aside for 10 mins)
Serve and enjoy your dish :)

Left over roti pakodi



Preparation time : 15 mins
Serves : 3

Ingredients :

Left over roti (or) Tortilla : 4 - 5
Oil for shallow frying (May be 1/4 cup or less)
For stuffing :
Boiled mashed potato : 1cup
Finely chopped onion : 1/4 cup
Dry mango powder (Amchoor powder ) : 1 tsp
Chat masala : 1/2 tsp
Finely chopped green chilis : 2
Finely chopped coriender leaves : 2 Tbsp
Salt : to taste
For Batter :
Gram flour ( or besan) : 1 cup
Red chili powder : 1/2 tsp
Ajwain seeds : pinch
Water : as needed
Salt : to taste
For sticking :
All purpose flour : 2 Tbsp
Water :as needed

Method :

In a mixing bowl mix together potatoes, onions, green chili, coriander leaves, dry mango powder, chat masala and little salt.
(You can also add boild green peas in the potato mixture that gives it samosa like taste.)
In a seperate bowl mix together besan, salt, red chili powder, ajwain seeds, and little water at a time and make a batter (like dosa). Mix it for 3 to 4 minutes till batter becomes little fluffy and keep it aside.
In a seperate bowl mix together all purpose flour and water and make a thick paste.
Now take roti, put genourous amount of potato mixture on one side of roti or torilla or chapati.


Put all purpose flour paste on the rim of the roti.
Roll it from one side to another and make a tight roll.
At the edges put some more all purpose flour paste and turn the edges as shown in the video.
Let it rest for few minutes so that edges get completely sealed.
Heat the pan at medium heat and add oil.
Dip the roll in besan batter and get it nicely coated from all the sides.


Put the rolled roti in hot oil.
Cook it from both the sides till roti pakora become golden brown and crispy.


Once done take roti pakoda out on a paper towel.


Yummy yummy and belly filling roti pakoda is ready to serve .

Couscous Stuffed capsicum or bell peppers

I love capsicum in any form and when it is stuffed wow... 
Give this a try and i am sure you will like it too :)


Preparation time : 30 mins
Makes : 4

Ingredients : 

Couscous packet : 1 (or 2 cups of cooked couscous)
Capsicum : 2 and 1/2
Onion : 1 1/2
Garlic cloves : 2 to 3
Tomato sauce : 4 Tbsp
Cheese : 6 Tbsp

Method :

Preheat oven to 375 degrees F or 190 degrees C

In a large pan over medium heat, saute one chopped onion, chopped green bell pepper, and garlic.
Reduce heat to low, add tomato sauce, and let simmer while preparing couscous.
Prepare couscous according to package directions, but add the remaining half onion to the water before adding the couscous.
When couscous is done, combine it with the sauce.


Cut peppers in half, 
Fill bell peppers with the mixture.
Top each with shredded cheese.Put these in a baking tray.
Bake at 375 degrees F (190 degrees C) for 20 minutes, or until cheese is bubbly and slightly brown on top.

Kalipina rotti / urad rotti


Preparation time : 30 mins
Serves : 3

Ingredients :

Urad dal : 1/2 cup
Rice : 1 cup
Water : 2 1/2 cups (approx)
Ginger : 2"piece
Green chili : to taste
Cumin seeds : 1 tbsp
Hing / Asafotida : pinch
Salt : to taste

Method :


Grind urad dal and rice to make it into ravva (Kind of sooji texture, you should not separate flour).
Keep it aside.
Grind green chili . ginger and keep it aside.
Now take a bowl, add ground ravva, paste that we made, hing, salt and cumin seeds.
Mix it once.
Add water (make it into dosa batter consistency)
Keep it aside for 8 hours.


Take a pan, add 1/4 cup of oil, add this soaked ravva mixture.
Cover and cook on low heat for 15 mins, turn over and cook for 15 mins.
You rotti is ready to serve.(Serve it hot preferably)

Urad flour patties / minaga pindi billalu / burlu pindi billalu


Preparation time : 15 mins
Makes :12
Serves : 2

Ingredients :

Urad flour : 1/2 cup
Rice flour : 1 cup
Cumin seeds : 1 tsp
Hing / Asafotida : 2 pinches
Salt : to taste
Chili powder : to taste
Sesame seeds : 4tbsp

Method :

Take a bowl, add flours, cumin seeds, salt , chili powder and hing.
Mix well.
Add water and make dough (like chapati dough).
Make balls and roll them in sesame seeds.


Pat them on cover and make patties.


Deep fry them in oil.
They will puff up like puri's.
Serve them hot.

sabudana kichidi (or) saggubiyyam kichidi

Sabudana khichdi is a maharashtrian dish.
Sabudana also known as tapioca makes a great khichdi. This recipe is mildly spiced and peanuts give it a light cruch and great taste. Tapioca khichdi is great for break fast or as a snack and it tastes really delicious.


Preparation time : 30 min + 2 to 6 hours
Serves : 2

Ingredients :

Sabudana / sago / tapioca / saggubiyyam : 1 cup
Roasted Peanut powder : 1/2 cup
Potato : 1
Green chili :  2 slit length wise
Cumin seeds : 1 tsp
Lemon juice : 1 tsp
Hing : pinch
Grated coconut : 1tbsp (optional)
Turmeric powder : pinch
Coriander leaves : few
Curry leaves : few
Salt : to taste

Method :

Soak sabudana for 2 to 6 hours.
(If sabudana is still hard then soak them for 2 more hours. Soaking time fully depend on type of sabudaana you are using , if you are in hurry you can soak them in warm water for less time)
Chop potatoes into small cubes.
Heat oil/ghee in a pan. (It takes little more oil i.e some 4 to 5 tbsp approx)
Add cumin seeds, hing, slit green chili, turmeric powder and curry leaves one by one by sauting them a bit.
Add chopped potato cubes and stir well.
Let them cook (You can cover and cook) till they are light brown on outside.
Add sabudaana and mix gently.
Let it cook for 10 to 15 mins stirring occasionally and scrap the sabudana layer from the bottom of the vessel.
Cook them till saabudana becomes translucent , shiny and pearl like colour.
Now add roasted peanut powder and salt.
Stir very well to make sure that everything is mixed good.
Add grated coconut and garnish with coriander leaves.
Sprinkle some lemon juice.
Serve it hot.

Masala corn

This is a recipe for masala corn , usually prepared in our area, most of the people don't know about it.
They prepare this using corn and have them as it is.
It tastes really good .....


Preparation time : 45 mins
Serves : 2

Ingredients :

Corn : 5 (medium size )
Onion : 7 ( Indian onion )
Green chili : 2
Red chili : 2
Cashew nuts : 6
Peanuts : 1 tbsp
Garlic cloves : 2
Clove : 1
Cinnamon stick : 1"
Cardamom : 1
Salt : to taste
Milk : 1/4 cup
Besan / Gram flour : 3 tbsp (approx)

Method :

Remove skin from corn and cut each one into 4" pieces.
Wash them good.
Slice onions and keep them aside.


Pressure cook corn with some water and little salt.


Drain the water and keep that water for later use.


Take a pan, heat it, add 2 tbsp of oil.
Once oil is hot add onions, garlic, peanuts, cashew nuts, green chili and red chili .
Fry them till onions are golden brown colour.
Let them cool down completely.
Grind them into a fine paste with little salt.


Take a pan, heat it, add 2 tbsp of oil.
Add clove, cinnamon stick, cardamom saute them for a bit.
Add the paste that we prepared.
Fry it for 5 mins.


Add milk and water from the corn, let the entire thing come to a boil.
Mix besan with little water and add besan mixture slowly to this , by mixing it.
Consistency is not too thick, and not too thin.
Let the entire mixture cook for 10 mins.
Check for taste. If you want you can add little (1tsp) of sugar.


Your masala corn is ready to serve.


Serve them hot.

Jinugula Rotte

This is one of the tastiest dish.
In our house this dish is must on Diwali night.
Try preparing this dish and enjoy the taste. 


Preparation time : 20 mins
Serves : 2

Ingredients :

Rice ravva : 1cup
Jinugulu : 1/2 cup
Water : 2 1/4 cup
Salt : to taste
For seasoning :
Mustard seeds : 1/4 tsp
Cumin seeds : 1/4 tsp
Urad dal : 1/4 tsp
Curry leaves : few
Green chili : 4 to 6

Method :

Soak jinugulu for at least 2 hours.
Cook them in pressure cooker for 3 whistles.
(If you are in hurry you can cook them directly for 6 whistles)
Keep them aside.


Take a pan, heat it , add a tbsp of oil, add seasoning ingredients , mustard seeds, cumin seeds, urad dal, curry leaves and green chili.
Saute them for a minute.
Add water, salt and cooked jinugulu.
Check for taste.


Once water starts to boil , add rice ravva .
Mix it till it thickens.
Cover and cook on low heat for 15 to 20 mins.


After 20 mins, take the lid off.
Mix it once with a fork.


Your yummy jinugula rotte is ready to serve.
Serve it hot with your choice of pickle.
