Marzipan - almond mug cake

Marzipan is a paste made from ground almonds and sugar. It is commonly colored and molded into fanciful shapes, but it is also used as a sweet. nutty ingredient, adding moisture and richness to a number of classic pastries.It is sold in 7-ounce tubes, and is available in most supermarket baking aisles. Almond paste, a similar product, can be used interchangeably here, with similar results. It is made for baking, not modeling, and is therefore a bit coarser.

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Marzipan or almond  paste : 3 Tbsp
Finely grated zest of small lemon or orange : 1
Unsalted butter : 1 Tbsp
Egg : 1 large
Milk : 1/4 cup
Vanilla extract : 1/4 tsp
Granulated Sugar : 3 Tbsp
All purpose flour : 1/3 cup
Baking soda : pinch
Kosher salt : pinch
Sliced almonds, preferably toasted : 2 to 4 Tbsp

Method :

In a large mug, combine the butter, marzipan, and zest.
Microwave for 20 seconds until softened.
Whisk in the egg with a fork.
Stir in the milk, vanilla, and sugar.
Add the flour and salt.
Beat the batter until smooth.
Fold in the almonds.
Divide the batter between two mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : whipped cream, creme fraiche, orange glaze, caramel sauce, sliced almonds, sliced apricots, or candied citrus zest.

Serve your cake hot with your choice of topping.

  1. Could you bake this cake normally in the oven by multiplying the batch? I really liked the mug recipe and wanted to recreate it larger. BTW no more than 1:30 for me on the timing. Too long and the cake becomes rubber. Made perfectly its moist and delicious.
