Fluffer nutter mug cake

Marshmallow fluff is a Massachusetts invention, and is not readily available outside of new England.
The rest of the country must make do with marshmallow creme. The Fluffer nutter sandwich comes from Massachusetts , too. Several attempts at making it the state sandwich have failed, probably due to health concerns. May be they should try it on whole wheat bread.



Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Peanut butter : 2 tsp
Egg : 1 large
Vegetable oil : 1 Tbsp
Milk : 1/4 cup
Vanilla extract : 1/2 tsp
Brown Sugar : 1/4 cup packed
All purpose flour : 5 Tbsp ( or 1/4 cup + 1 Tbsp)
Baking soda : pinch
Marshmallow fluff or Marshmallow creme : 2 Tbsp
Kosher salt : pinch

Method :

In a large mug, whisk together the peanut butter , egg and oil with a fork.
Stir in the milk, vanilla and brown sugar.
Add the flour, baking soda and salt.
Beat the batter until smooth.
Fold in marshmallow fluff. (As i don't have marshmallow fluff i just added marshmallows)
Divide the batter between two mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : Whipped cream, another dollop fluff (if you dare), sliced bananas, chopped peanuts, chocolate sauce, or chocolate shavings.

Variations :
Nutella - fluffer : Replace the peanut butter with Nutella.
Fluffer - nana - nutter : Fold sliced ripe bananas into the batter.

Serve your cake hot with your choice of topping.
