Gulab jam with jamun mix





Preparation time : 30 mins
Makes : 50

Ingredients :

Jamun Mix : 100 grms (or ) 3/4 cup
Milk : less than 1/4 cup
(jamun mix : milk = 1 : 1/4)
Cashew / Pista : 20
Ghee : 1tsp

Sugar : 200 grms (or) 1 1/4 cup
Water : 2 1/4 cup
Lemon juice : 1/2 tsp
Cardamom powder :  1/4 tsp

Method :

Take jamun mix powder , sieve it to a bowl.
( Even add what you got in sieve - sieving is just to make sure no lumps and to get soft jamuns)
Mix it with milk.
(Do not over knead)
When you touch the dough it should be soft, non sticky, and make little impression.
Cover it and let it sit for 10 mins.

Mean while prepare the sugar syrup for jamuns.
In a pan add sugar, water.
Bring it to boil and stir until the sugar dissolves completely and syrup becomes slightly sticky.
Do not boil too much.
Add cardamom powder and lemon juice.
Keep it aside.

Now take the dough and divide it equally and make small balls without any creases.
This is important.
Take cashew pieces and insert in each ball (like stuffing cashew in middle of the ball)
Make a soft ball.
Make all of them like that and keep it aside.

Heat oil in a pan, fry the jamuns in medium heat so that the inside of the jamun will also get cooked.
Keep stirring it gently for even cooking and browning.
Remove with a slotted ladle when it becomes nice dark brown in color.
(The color reduces a bit after dropping them in syrup)
Put this first batch in a bowl and make 2nd batch.
Before you take the 2nd batch from the oil, put these first batch in hot sugar syrup.
Make all of them like that.

Let the jamuns soaked in the sugar syrup for one hour.
Yummy yummy jamuns are ready to serve.
You can serve them hot or cold.
If preferred, you can top it with vanilla ice cream and enjoy.
