agave-lime mug cake (Sugar free)

Because it is made from the same plant that brings us  tequila, it is no surprise that the flavors that complements tequila also complement tequila also complement agave syrup. But don't let that limit you. Agave is terrific wherever you need a little sweetness.

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Unsalted butter : 2 Tbsp
Finely grated zest and juice of lime : 1
Large egg : 1
Agave syrup : 1/4 cup
Unsweetened coconut milk or sour cream : 2 Tbsp
All purpose flour : 6 Tbsp ( 1/4 cup + 2 Tbsp)
Baking soda : pinch
Kosher salt : pinch

Method :

In a large mug, combine the butter and lime zest.
Microwave for 20 to 30 seconds until the butter is melted
Whisk in the egg with a fork.
Stir in the lime juice, agave, and coconut milk.
Add the flour and salt.
Beat the batter until smooth.
Divide the batter between 2 mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas :  Agave-sweetened whipped cream, coconut whipped cream, sliced bananas, or sliced mango.

Serve your cake hot with your choice of topping.
