Ginger - peach mug cake

There are several types of peaches-white, yellow, cling stone, free stone - and all are suitable for this recipe. Nectarines, the fuzz - free peaches, can be used here, too. Be sure to let it ripen all the way, so that its full peachy potential can shine.

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Egg : 1 large
Vegetable oil : 3 1/2 Tbsp
Buttermilk : 3 1/2 Tbsp
Vanilla extract : 1/4 tsp
Brown Sugar : 1/4 cup packed
All purpose flour : 6 Tbsp (1/4 cup + 2 Tbsp)
Baking soda : pinch
Kosher salt : pinch
Ground ginger : 1/2 tsp
Fresh peach chopped : 1 (1/2 cup chopped canned peaches, drained)
Chopped ginger or pecan pieces : 2 Tbsp

Method :

In a large mug, whisk together the egg and oil with a fork.
Stir in the butter milk, vanilla, and sugar.
Add the flour and salt, and ginger.
Beat the batter until smooth.
Fold in the peaches and candied ginger.
Divide the batter between two mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : whipped cream, creme fraiche, caramel sauce, candied pecans, or candied ginger.

Serve your cake hot with your choice of topping.
