Sweet potato mug cake (Vegan)

Sweet potatoes are a super food, full of vitamins, fiber, and flavor. Cook them just like a baked potato in the oven or microwave, boil them, or be super - sneaky and buy a jar of sweet potato food. No one will know but you, and you know it's wholesome!

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Egg substitute : 1 Tbsp
Water : 1/4 cup
Mashed cooked sweet potatoes : 1/4 cup
Soy, rice or almond milk : 2 Tbsp
Pure vanilla extract : 1/4 tsp
Brown sugar : 1/4 cup packed
All purpose flour : 7 Tbsp ( 1/4 cup + 3 Tbsp)
Baking powder : pinch
Kosher salt : pinch
Ground cinnamon : 1/2 tsp
Freshly grated nutmeg : 1/2 tsp
Ground ginger : 1/2 tsp
Toasted pecans or walnuts, chopped : 3 Tbsp

Method :

In a large mug, whisk together the egg substitute and water with a fork and set aside for 5 minutes to thicken.
Stir in the sweet potato, soy milk, vanilla and sugar.
Add the flour, salt and spices.
Beat the batter until smooth.
Fold in the nuts.
Divide the batter between 2 mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas :  Caramel sauce, pomegranate syrup, nondairy whipped topping, toasted pumpkin seeds, or confectioners' sugar.

Serve your cake hot with your choice of topping.
