Food coloring is not always a welcome ingredient, but this cake is a much beloved component of March 17th celebration - especially if you're feeding little leprechauns. For the bigger leprechauns, omit the peppermint and add a tablespoon or three of Jameson's Irish whiskey.
Preparation time : 10 mins
Makes : 2 Mug Cakes
Ingredients :
Egg : 1 large
Vegetable oil : 3 Tbsp
Granulated Sugar : 1/4 cup
Vanilla extract : 1/4 tsp
Liquid green food coloring : 1 tsp
Butter milk : 3 Tbsp
Peppermint extract : 1 drop
All purpose flour : 1/3 cup
Baking soda : pinch
Kosher salt : pinch
Method :
In a large mug, whisk together the egg and oils with a fork.
Stir in the sugar, vanilla , food coloring, buttermilk, and peppermint or whiskey.
Add the flour and salt.
Beat the batter until smooth.
Divide the batter between two mugs.
Microwave separately for 11/2 to 2 1/2 minutes each until risen and firm.
Yummy mug cake is ready to serve.
Topping ideas : Cream cheese frosting, green crystal surgar, Irish whiskey glaze, chiffonade of peppermint leaves, or shaved chocolate.
Serve your cake hot with your choice of topping.
