White chocolate - key lime mug cake

Key limes, known as Mexican limes in some parts of the country, are not much bigger than a kumquat, and turn from green to yellow when ripe, if you can't find them, any lime will work here, as will bottled lime juice.

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Egg : 1 large
Vegetable oil : 1 1/2 Tbsp
Sour cream : 1 Tbsp
Finely grated zest of lime : 1
Key lime juice : 2 Tbsp
Granulated Sugar : 1/4 cup
All purpose flour : 1/4 cup
Baking soda : pinch
Kosher salt : pinch
White chocolate chips : 1/4 cup

Method :

In a large mug, whisk together the egg and oil with a fork.
Stir in the sour cream, lime zest, lime juice, and sugar.
Add the flour and salt.
Beat the batter until smooth.
Divide the batter between two mugs.
Microwave separately for 30 seconds each.
Top each mug with half of the chips, then continue to cook each mug for 1 to 1 1/2 minutes more until  risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : Lime glaze, lime curd, creme fraiche, shredded coconut, chopped macadamia nuts, candied lime zest, or a wedge of lime.

Serve your cake hot with your choice of topping.
