White chocolate - macadamia mug cake

Although the pairing of a buttery, rich nut and buttery, rich chocolate seems counter-intuitive, it actually works. Plop them into the batter after the cake has cooked a bit to prevent sinkage,

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Egg : 1 large
Vegetable oil : 3 1/2 Tbps
Buttermilk : 3 1/2 Tbsp
Vanilla extract : 1/4 tsp
Granulated Sugar : 1/4 cup
All purpose flour : 5 Tbsp (1/4 cup + 1 Tbsp)
Baking soda : pinch
Kosher salt : pinch
White chocolate chips : 1/4 cup
Chopped Macadamia nuts : 1/4 cup

Method :

In a large mug, whisk together the egg and oil with a fork.
Stir in the buttermilk, sugar, and vanilla.
Add the flour and salt.
Beat the batter until smooth.
Divide the batter between two mugs.
Microwave separately for 30 seconds each. Top each mug with half of hte chips and nuts, then continue to cook each mug for 1 to 1 1/2 minutes more until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : whipped cream, creme fraiche, chopped macadamia nuts, shredded coconut, grilled pineapple sauce, fresh mango, fresh papaya, candied citrus zest, or a wedge of lime.

Serve your cake hot with your choice of topping.
