Pumpkin spice mug cake

Throw on your Snuggie and curl up with this autumnal favorite. The pumpkin puree can come from a can, or you can make it yourself by boiling diced pumpkin or butternut squash until tender, then mashing it with a fork. Of course, if you're into mug cakes, homemade pumpkin puree probably isn't in your bailiwick. In that case, for super easy pumpkin puree, buy buttermilk squash baby food. ( I wont's tell anyone.)
Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Egg : 1 large
Milk : 2 Tbsp
Pumpkin puree : 1/4 cup
Pure vanilla extract : 1/4 tsp
Brown sugar : 1/4 cup packed
All purpose flour : 7 Tbsp ( 1/4 cup + 3 Tbsp)
Kosher salt : pinch
Pumpkin pie spice : 1/2 tsp
(or ground cinnamon, nutmeg, ginger : 1/8 tsp each and a very tiny pinch of clove)
Toasted pecans or walnuts, chopped : 3 Tbsp

Method :

In a large mug, whisk together the egg and pumpkin puree with a fork.
Stir in the milk, vanilla and sugar.
Add the flour, spices and salt.
Beat the batter until smooth.
Fold in the nuts.
Divide the batter between 2 mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas :  Whipped cream, maple whipped cream, Nutella whipped cream, penuche frosting, hard sauce, caramel sauce, freshly grated nutmeg, dried cranberries, or candied walnuts.

Serve your cake hot with your choice of topping.
