The cashew nut is actually a seed that grows off the end of the cashew apple, sweet, delicate, tropical fruit commonly made into a fruity drink in the tree's native South America. Cashew nut paste is used frequently in Indian curries, and the whole nut appears in recipes throughout China and Southeast Asia. In the United States we see it mainly in nut mixes, and in bad sneezing jokes.

Immediately pour them out of the hot pan and let them cool ( it will only take a minute or two) before adding them to your recipe.
