Sesame - cashew mug cake

The cashew nut is actually a seed that grows off the end of the cashew apple, sweet, delicate, tropical fruit commonly made into a fruity drink in the tree's native South America. Cashew nut  paste is used frequently in Indian curries, and the whole nut appears in recipes throughout China and Southeast Asia. In the United States we see it mainly in nut mixes, and in bad sneezing jokes.

Preparation time : 10 min
Makes : 2 Mug Cakes

Ingredients :

Egg : 1 large
Vegetable oil : 2 Tbsp
Sesame oil : 1/2 tsp
Milk : 2 Tbsp
Granulated Sugar : 3 Tbsp
All purpose flour : 6 Tbsp (1/4 cup + 2 Tbsp)
Baking soda : pinch
Kosher salt : pinch
Ground ginger : pinch
Black or white sesame seeds preferably toasted : 1 Tbsp
Cashew nuts chopped : 1/4 cup

Method :

In a large mug, combine the egg and oils with a fork.
Stir in the milk and sugar.
Add the flour , ginger , salt and sesame seeds.
Beat the batter until smooth.
Fold in cashews.
Divide the batter between two mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : whipped cream, green tea whipped cream, coconut whipped cream, sour cream, candied ginger, lychee nuts, kiwi fruit, or freshly grated nutmeg.

How to toast seeds :
The best way to toast seeds is in a small, dry saute pan on the stove top. Heat the pan, add the seeds, then toss them around continuously until their color darkens and you can smell them. Immediately pour them out of the hot pan and let them cool ( it will only take a minute or two) before adding them to your recipe.

Serve your cake hot with your choice of topping.
