Plum - sage mug cake

Spring and summer are the season for a wide variety of plums, the sweet-tart member of the stone fruit family that ranges in colour from green and yellow to red and deep dark purple. The addition of sage gives this cake a piquant, savoury tone that is mouth wateringly delicious.

Preparation time : 10 mins
Makes : 2 Mug Cakes

Ingredients :

Unsalted butter : 2 Tbsp
Fresh plum, finely diced : 1
Fresh sage leaves, minced : 2 tsp ( or ground sage : 1/2 tsp)
Egg : 1 large
Milk : 3 Tbsp
Vanilla extract : 1/4 tsp
Granulated Sugar : 1/4 cup
All purpose flour : 6 Tbsp (1/4 cup + 2 Tbsp)
Baking soda : pinch
Kosher salt : pinch

Method :

In a large mug, combine the butter, plum and sage.
Microwave for 30 seconds until the butter is melted.
Whisk in the egg with a fork.
Stir in the milk, vanilla, and sugar.
Add the flour and salt.
Beat the batter until smooth.
Divide the batter between two mugs.
Microwave  separately for 11/2 to 2 1/2 minutes each until risen and firm.

Yummy mug cake is ready to serve.

Topping ideas : whipped cream, creme fraiche, sour cream.

Variations : Sage is a lovely accompaniment to many fruits, including cherries, nectarines, and pine apple, as well as other classic pastry flavors like vanilla bean and caramel.

Serve your cake hot with your choice of topping.
